Turns out, this is a really cool place. The interior is completed decked out in everything that is firefighter. They even have a cool mannequin dressed in firemen gear "climbing" a ladder that is also affixed to the ceiling. I also saw a pool table, dart boards as well as a stage I can only assume is used for live bands. The night I was there was also Game 3 of the NBA Finals, and they had the game playing on several good sized TV's. For you smokers, or those just want to drink outside, they have a patio. It isn't super large, but it is covered with tables as well. The bartender that night was really sweet. She took knew the guys I was with, and although I was the newcomer, she took care of me just the nice. I think that I have found a new place for the nights few and far between I spend at the bar, whether I am alone or with my friends. Lastly, the drink prices were not bad at all. I highly recommend.

If I were going off just that, I would give this place a four star, maybe five. First, the restaurant. We went there for lunch and as we pulled into the parking lot we wondered if it was even open as there were no cars there. Nevertheless, we got out and, yes, they were open. As soon as you walk in you notice the place is big and dark. Dark tinted winders, black ceilings and just not very inviting. It was super dark. Giant bar though. We asked to sit outside, although slightly warm, it was better than being inside a dark room. The outside was pretty cool! Giant area capable of holding 2K people, at least that's what the sign said. The shipping containers with the airplane on top were pretty cool. With lots of outdoor games, giant stage, and screens, I can only imagine how busy this place is in the evenings or weekends. But for us, we were the only ones out there when we came. Second the food. As I mentioned my wife ordered the shrimp tacos and she said they were really good. I ordered the Jazz burger. It was just okay. The smashed patties were not season very well, or they were overpowered with the bacon jam. And the bacon on top was not cooked very well. Yes, I do like my bacon crispy so I guess I could have mentioned that. But the bacon was super soft. Not my favorite. So for me, overall the food was just ok. The one thing I found strange about the food was how unaccommodating the kitchen was. I certainly understand when kitchens don't allow substitutes but when I asked for something simple like "no bun" for the burger they apparently gave the server a tough time. So my burger came with a bun. Which isn't a big deal, just don't like to waste food. My wife asked if she could mix match the tacos (most places will allow you to do this especially when they offer more than one type of taco) again the answer was the chef didn't allow for this (chef wasn't even there at the time). Now, is this a huge deal? No, not really. But a restaurant that wants to thrive and be well known usually will accommodate requests within reason. Not sure why this kitchen was so stuck on these things. The one great thing about this place was the service, and specifically the server. He really did do an amazing job even though he might have been the only one there besides whoever was in the kitchen. He was super friendly, checked on us, and even took time to just chat a little bit. He really made this experience as good as it was. What a great server/bartender. We went for a quick lunch and then headed back with our puppy for a couple of hours. The inside restaurant and bar was very unique, loved it. Kind of retro and plenty to do. The outside is really fun all the way around. My puppy really loved the little river they have. The staff is amazing, attentive, sweet and extremely friendly. We will make Gringo Theory a regular place to go to.

I was intrigued because most bar food was fried and greasy. When my brother in law came to town, I wanted him to experience the welcoming down to earth nature of the bars here (where families go out to drink together) and I was curious about the food. Wow. The bbq and brisket is legit. They have a smoker (locked up for some reason) that they smoke meat in every day and the results are super tender bbq and meats. They have a super clean full kitchen in the back (I asked to peek and thank the cooks) and they do some legit restaurant food here. The menu is pretty simple, the prices are super fair for the amount of food you get. We were 8 adults and it fed us all easily. We got nachos, zucchini sticks, onion ring petals, the brisket sandwich, and the ribs plate with beans and fries. We also got a lot of beer and shots to celebrate my in laws moving here. Happy Hour is from 12-8pm $2 Domestics = Miller/Bud/bud light /coors $3 Well Service was very friendly and the crowd was too, it seems that everyone was friends with each other which is nice to introduce to my out of town guests.
