Having been warned by previous reviews that the steaks tend to be undercooked, I ordered my ribeye medium, and sure enough it came - very quickly too - closer to what I would call medium rare, which is what I really wanted. Also as warned by previous reviews, it was heavily marbled and fatty, but I like that in a steak.

It was then I remembered glancing at a huge Beef Processing Plant just on the edge of town...think it was called National Beef... And then it hit me: Cattleman's Cafe + Beef Processing Plant...maybe...just maybe..they served steak here That's how I found myself sitting inside this Midwestern country diner. The description on the menu-- Uncle Ed's Steak sounded legitimate. So I had me a rib eye, with a side of corn and Brocolli. Then to start off, some Bloomin Onions. Rating: Ok, I'm going to be real honest, the quality of the beef is *Good* Its on the level of USDA Choice Select, but it IS fresh. Like I can enjoy the natural flavors of the Beef, it's not drenched in marinade and just the overall taste spelled decent quality. Now, because back in the days, I would go out to Costco and pick up USDA Prime Ribeyes three or 4 cuts at under 45.00 (those were the good times). But it wouldn't be fair to compare this to that so for a standard family run affair, this place serves pretty solid steak. Though however the chef kinda went on the rarer side for my Medium Rare and if the cuts have so much fat marbling in them, it probably would be better for the steak to be grilled longer on the fat tissues. The corn sides were a little to sweet and wished they either cut down on the sugar, or use some heavy whipping cream or half and half to balance that sweetness out-- like real creme corn. The Bloomin Onions were a surprise. Over the past decades, I'd probably only order this appetizer at say Outback Steakhouse, but this dish does take the prize for a worthy starter here at the Cattleman's. Overall, server was very locked in. True country hospitality, think her name is Naziah. Kudos! Great service! And anyone ever driving through town, give this place a go.

I do't even know how many times I've stopped and eaten here while passing through Dalhart. I do know this... we are RVers and live over 350 miles away but we almost always spend the night in Dalhart because of the XIT grill. In visiting with the server tonight, who was 5 stars, he mentioned that the restaurant was under new ownership or management. I had asked about the bread that they used to serve - and is one of my reasons for stopping - and he said that management had decided to go with bread "buns"it's a roll. It's okay, but not special like the loaves used to be. That change brings one star and might be enough to discourage me from choosing Dalhart as our "layover" point. I had the cowboy sirloin. It had good flavor and was cooked perfectly, but it was as tough and chewy as a leather boot. These items can be fixed. The margins might not be be as high ot the price might need to go up. Your choice, but you just dropped below a great little BBQ spot - and this meal was not worthy of spending the night for and especially not planning a night in Dalhart. That means the place we stay loses, where we buy fuel loses. Where we normally have breakfast loses. Here's an error in many businesses. They gorget to consider fixed costs when trying to raise margins. I know overall margins are small, but margins on food are usually 69% plus. Think about your customer count and see if the changes you've implemented are a feel good improvement or an actual overall improvement. As you do your calculations, include what it costs to retain business because lower quality doesn't really pay off unless you're running a fast food restaurant.
