He tried to sharpen them out, but ended up making it far worse. I found Knives Edge Japan and they were willing to give it their best shot repairing the 7-10 2-3mm deep "serrations" in my gyuto. They were done in a day, and they completely restored the edge to top performance. Not only is the knife repaired, but it's far sharper than I have ever been able to get it with my edge pro. What I thought was a loss of a nice Makoto White #2 gyuto came out with a nearly perfect restoration, with great care given to restore the original edge profile. If you were similarly treated, I recommend you do the same. One final anecdote that illustrates the larger experience. At the time of drop off, the owner/employee? begged for a Yelp review. I told him "maybe" once the transaction was completed. Then when I picked up the espresso machine he begged again for a Yelp review - even asked me to take my phone out of my pocket to do it "right now". Devin's mobile service hit all the marks. Found him at the Lone Star Farmer's Market in the Hill Country Galleria one day [check his SM for locations]. He charges by the inch and provides great customer care above and beyond any expectations. I retrieved several of my knifes from my house and vroom...back to Devin's mobile work station before he shut down for the day. In less than an hour, and under 100 bucks, he had my knives sharper than the sword in "My Bodyguard." Truth! And, he had them all neatly wrapped in a perfect little package. Thanks again Devin!
