I figured if I was going to try, it needed to be at a place that knew what they were doing. James our sushi chef, definitely knew what he was doing. The servings were one piece at a time, served at a comfortable pace. Each piece was a different sort of fish, or a piece of wagyu beef! I enjoyed myself. Pretty good for Nashville standards, especially as someone who's had omakase in Japan, California, and Hawaii. For the price of $75, you really can't go wrong. The main difference I noticed compared to other omakase experiences was the nigiri preparation. The pieces here seemed to be pre-cut, whereas at other places I've usually seen the chef slice and prepare each piece in front of you, which adds more to the experience and presentation of the fish. This omakase also follows more of a set menu format, so it doesn't really change based on seasonality or fish availability. We initially arrived at Noko and were graciously guided over to a somewhat hidden, speakeasy-style sliding barn door into the intimate bar at Kase x Noko. Standouts included the Princess Ichigo, Naked & Afraid, Komorebi, and a 2 oz pour of Hibiki Harmony Japanese whisky. My friend reserved a private dining experience for 14, and it couldn't have been more perfect with an intimate tabeled bar, two sushi chefs, and a front-row seat to artistry in motion. Course by course, we worked our way through what felt like a perfectly curated journey with each bite more impressive than the last. Fourteen rolls later, I was still in awe. Vinny, our server, brought such a fun energy to the night, he was engaging, attentive, and incredibly knowledgeable. He answered all of our questions with ease and elevated the entire experience. Standouts for me: the salmon caviar, yellowtail, red snapper, fatty tuna belly, and Japanese wagyu, although all were truly melt-in-your-mouth heavenly experiences! I waited weeks for a reservation at Kase x Noko. I had a timer on at midnight just to be able to reserve it when the next booking date opened. And boy was it worth the wait! I've been around Nashville for a very long time and it was really cool to see an omakase spot like this open up. When we walked in for our reservation, it was a very intimate feel. They had no more than 20 seats available. The omakase was 14 courses and every bite was so delicious! My favorites for the Chotoro, otoro, and the Wagyu steak towards the middle of the courses. All of the fish was extremely fresh and yummy. My least favorite course was the dessert. The mochi was powdery and chewy and we could barely have more than one bite of it. We also tried a few of their drinks but none of them really stood out. I feel like if they fixed dessert and drinks then this place would really be a home-run. Great omakase! We finally were able to get reservations & got a prime 7pm Saturday night in August to celebrate my wife's birthday. We showed up about 10 mins early as requested in the dimly lit bar area & were given cocktail menus. Ambiance is nice, but there are only 5ish bar seats in a seemingly small, 10 foot by 10 foot waiting area. With 14 ish people all showing up 5-10 mins before & 5 seats, it makes for a little cramped waiting experience. That staff all around were incredibly friendly & welcoming & we were sat right at 7pm. The fish selection & quality was solid, & we loved the variety! My favorite was anything otoro. Definitely recommend the Kreme de la Kreme, & the Panda Panda Panda mocktail (for dessert)! Their cocktail menu is very eclectic & I wish we could've tried them all. For 14 courses & a few a la carte items & cocktails/mocktails, our total after tip came to about $300 total for 2 people. For a landlocked state, this is an excellent omakase. Having had Michelin-star quality omakase in places like NYC/Boston, this isn't the "best" omakase we've experienced. For anyone who doesn't know what Kase is, one get out from under the rock, but two you have to stay up to until midnight and get a reservation for yourself. Kase is a small and intimate establishment. The bar before the dining room is VERY small, only 4 seats, but that makes for a great place to sit and chat with the bartender before your meals. I stayed up late binge watching a tv show and was able to get two reservations to Kase in 1 week. I figured if I didn't like it the first time, I could give my 2nd reservation to someone else. I love omakase and if I loved it, then I got delicious food twice in a week so I felt this was a win win for me. There is free parking in the lot or or on the nearby streets. If you have the 7 pm reservation or earlier, you'll want to make sure you go earlier because the parking lot can be crowded. You ABSOLUTELY want to make sure you're on time if not early. They only have 14 seats, and they seat you all at one time. If you're late, then it could set that timed sitting late, and in turn the reservation after. Worried about being early and bored? No problem! There is a waiting area with a bar. Now the waiting area isn't too large, but it works. They offer mocktails, cocktails, and other liquors. When you order from the bar, they'll carry that over to your dinner table. The wait staff share the tips with the bartenders so you'll still have the opportunity to tip your bartender. My friend and I had big purses and were kindly offered purse hooks!! This is a lovely touch. You'll notice the chopsticks have the Kase X Noko engraved into them, which I thought was a small yet nice way to make the experience unique. You'll be asked if there are any food allergies. (My friend has Celiac's and was able to eat every dish but one, which they gave her a hand roll instead of toast). (I also have a weird yuzu sensitivity thing and they were able to accommodate without messing up the integrity of the dishes). Omakase means I Leave The Details Up To You. So after you tell them if you have any allergies, just sit back and enjoy. They bring out fish after fish for you to enjoy. I finally was brave enough to try and secure a reservation here for my birthday - I got really lucky that it was an easier process than expected! On the reservation, prior to my reservation date, and after being seating I was asked about any allergies, which was very thorough and luckily for me none of my allergens were present. This was some of the best sushi I've ever had! Everything tasted incredibly fresh, it was perfectly paired with any sauces or additional flavors needed, and some of the pairing were things I wouldn't have thought up on my own like add oranges to a hand roll or pairing roasted Shishido on top of sushi. My favorites were the hamachi, the wagyu, and the zuke maguro - but there was not a bad dish! We also added on the scallop Aburi, which was fantastic! The night I went they subbed the eel for freshwater eel, which was a real treat! Since it was my birthday, they did an extra piece of sushi with a candle, which was cute and appreciated! I also really enjoyed the playlist of hip hop/rap songs, although it didn't match the aesthetic generally, I appreciated it. After an amazing meals I even got a phone call the next day with them just wanting to check in to make sure I had a good experience, a great birthday, and to thank me for visiting - what a kind touch! I've been to many restaurants in Nashville, but this one is easily the most memorable. From start to finish, the experience felt special. The service was outstanding--though be prepared to wait outside for a bit before your time slot in a small room with a bar and the door to the omakase room (which happens to be right by a bathroom). As soon as you're seated, you're invited to order a drink (highly recommend!) before they begin the omakase set. Each dish is prepared right in front of you, and the chefs take the time to explain every item as they place it on your plate. We were lucky to sit right in the center, with a perfect view of both sushi chefs--it made the evening even more engaging. The set had a great balance of simple sushi that honored the pure flavor of each ingredient, as well as creative combinations showcasing Kase x Noko's unique twist. For example, the yellowtail spoon--refreshing and bright--and the salmon caviar. I'd also recommend adding a few à la carte items to round out the experience, especially with the omakase set being so reasonably priced. As a thoughtful touch, they surprised us with a birthday sushi topped with a candle, which was such a sweet gesture. The next day, they even called to ask about our experience--unexpected but appreciated. If you're looking for an unforgettable omakase in Nashville, this place is worth every moment. I dined at Kase on Wednesday, January 29, 2025 at 7 pm. This was my second time experiencing omakase and it was a much more better experience. I thought the dimly lit room brought a nice intimate ambience to experience. Everything from the menu, omakase chefs, and the service were excellent. All the raw fish tasted fresh and were masterfully prepared. The chefs were interactive and explained each item on the menu, which was much needed given that the actual menu hardly had any description or translation. I appreciate that the fish were cut ahead of time so we didn't have to waste any time waiting. Since there were 2 omakase chefs, each preparation was served pretty quickly after the other, so there was not that much waiting. I was actually surprised how fulfilling this omakase experience was, I really enjoyed all the torched preparations because everything torched is always flavorful. The spirit-free panda panda panda drink had such a nice pandan aroma, I just wished it came in a larger glass! Service was super attentive, waters and ginger were refilled regularly. When we arrived, we waited in the front room where had we had a bit more time, we could have ordered a cocktail and brought it with us into the omakase room. When we entered the room, we were seated around a bar alongside others there and we were able to order our cocktails. I had the ichigo princess which was absolute delicious and probably one of the best drinks I had! Not long after, they began the omakase set with the chefs preparing the sushi in front of us. When they placed the each course in front of us, they explained what it was and how to best enjoy it. I enjoyed some more than others, but was overall pretty happy with what we got. The wait staff was very attentive to what we needed and there was a fun playlist playing in the background that kept our group very entertained. As we finished the last course, the dessert, they immediately brought us our check. They were quick to process them for all the parties and then before we knew it, people were filing out. As a sushi lover, this was hands down the best dinner experience I've ever had in Nashville. The service was amazing, music playlist was top notch, and the fish was so fresh and delicious. We went for the last serving of the night and we were allowed to order any of the courses a la carte, which was amazing. Definitely recommend snagging the last service if you can hold out!!!
