The hardest reservation in Nashville turned out to be the easiest room I have ever eaten in. That is not what I expected walking into a counter with fourteen seats and a chef standing three feet in front of me. We came for my partner's birthday, which felt like a gamble for a place this small and this structured. It was the right call. The space is low lit and built out of dark wood and a playlist underneath that leans R&B and hip hop. It sounds like a contradiction and it absolutely works. Personally, I was reliving my 90s childhood and loving it. Everyone faces forward, so there is no table of strangers across from you and no lull you have to fill. You are next to people rather than opposite them. The experience is fourteen courses in ninety minutes, $75. My favorite of the lineup was the zuke maguro, the leanest cut of tuna they served, sourced from Spain. Clean and lean where so much of omakase leans rich, and the marinade does the work without covering up the fish. The salmon caviar was the other standout, those little bursts of salt and brine. Then the A5 wagyu. Its marbling is a different category of eating. Rich and fatty, which was a nice break from the line up of fish. Around course 9, they come around and ask if you want to revisit anything or order additional add on items off their menu. This is an extreme value. You get your money's worth and then some, especially measured against what a tasting menu this long costs anywhere else in town. Practical notes: Reservations release on OpenTable at midnight, six weeks out, every single night. Three seatings at 5:30, 7:00 and 8:30, and they start promptly, so arrive a little early. They cannot accommodate vegetarians or fish allergies. Parking is a small shared lot with some street parking nearby. The four seat cocktail bar next door is walk up only and is, fittingly, the smallest bar in Tennessee. Let me be honest about this one. Four seats is a harder room than fourteen. If you are the type to feel exposed standing in a space that small, skip the pre-dinner drink and go straight to the counter. One more thing worth knowing. Kase donates one percent of net profits to the Nashville Children's Alliance, which provides services at no cost to children in Davidson County who have experienced sexual or severe physical abuse. Restaurants run on thin margins as it is. A place this small choosing to give a cut of that away says something about how they operate, and it is a cause worth supporting (beyond the fantastic meal you also get). read more

They book out 6 weeks in advance; with only 14 seats and 3 seatings per night, they are sold out in seconds when they go on sale at midnight. I have lucked out twice, once even getting a duo, so not impossible, but not easy. When you enter, you walk into a small bar area, where you can order a cocktail or two. I opted for the Shibuyu Nights, which had a slight coffee note on top of the whisky and bourbon. At the prescribed time, you are led into the omekase and the experience begins. Cue fanfare music now. This is nearly the definition of perfection. Each dish was both art and culinary genius. Pacing is perfect. Chefs interact with the patrons, enhancing the experience and the wait staff is well versed on which types of sake work best with different course. At the end of the meal you can add on extras, some from the menu and others off. If you are not full, I recommend considering the add ons. Kudos to the chef for handling my shellfish allergy with wonderful subsitutions. At $75, this is a steal. WIth extras, sake, and drinks, I ran over $200 for 1, but it was worth every minute. I waited weeks for a reservation at Kase x Noko. I had a timer on at midnight just to be able to reserve it when the next booking date opened. And boy was it worth the wait! I've been around Nashville for a very long time and it was really cool to see an omakase spot like this open up. When we walked in for our reservation, it was a very intimate feel. They had no more than 20 seats available. The omakase was 14 courses and every bite was so delicious! My favorites for the Chotoro, otoro, and the Wagyu steak towards the middle of the courses. All of the fish was extremely fresh and yummy. My least favorite course was the dessert. The mochi was powdery and chewy and we could barely have more than one bite of it. We also tried a few of their drinks but none of them really stood out. I feel like if they fixed dessert and drinks then this place would really be a home-run. Pretty good for Nashville standards, especially as someone who's had omakase in Japan, California, and Hawaii. For the price of $75, you really can't go wrong. The main difference I noticed compared to other omakase experiences was the nigiri preparation. The pieces here seemed to be pre-cut, whereas at other places I've usually seen the chef slice and prepare each piece in front of you, which adds more to the experience and presentation of the fish. This omakase also follows more of a set menu format, so it doesn't really change based on seasonality or fish availability. We showed up about 10 mins early as requested in the dimly lit bar area & were given cocktail menus. With 14 ish people all showing up 5-10 mins before & 5 seats, it makes for a little cramped waiting experience. That staff all around were incredibly friendly & welcoming & we were sat right at 7pm. The fish selection & quality was solid, & we loved the variety! My favorite was anything otoro. Definitely recommend the Kreme de la Kreme, & the Panda Panda Panda mocktail (for dessert)! Their cocktail menu is very eclectic & I wish we could've tried them all. For 14 courses & a few a la carte items & cocktails/mocktails, our total after tip came to about $300 total for 2 people. For a landlocked state, this is an excellent omakase. Having had Michelin-star quality omakase in places like NYC/Boston, this isn't the "best" omakase we've experienced. We initially arrived at Noko and were graciously guided over to a somewhat hidden, speakeasy-style sliding barn door into the intimate bar at Kase x Noko. Course by course, we worked our way through what felt like a perfectly curated journey with each bite more impressive than the last. Fourteen rolls later, I was still in awe. Vinny, our server, brought such a fun energy to the night, he was engaging, attentive, and incredibly knowledgeable. He answered all of our questions with ease and elevated the entire experience. I stayed up late binge watching a tv show and was able to get two reservations to Kase in 1 week. I figured if I didn't like it the first time, I could give my 2nd reservation to someone else. I love omakase and if I loved it, then I got delicious food twice in a week so I felt this was a win win for me. There is free parking in the lot or or on the nearby streets. If you have the 7 pm reservation or earlier, you'll want to make sure you go earlier because the parking lot can be crowded. You ABSOLUTELY want to make sure you're on time if not early. They only have 14 seats, and they seat you all at one time. If you're late, then it could set that timed sitting late, and in turn the reservation after. Worried about being early and bored? No problem! There is a waiting area with a bar. Now the waiting area isn't too large, but it works. They offer mocktails, cocktails, and other liquors. When you order from the bar, they'll carry that over to your dinner table. The wait staff share the tips with the bartenders so you'll still have the opportunity to tip your bartender. My friend and I had big purses and were kindly offered purse hooks!! This is a lovely touch. You'll notice the chopsticks have the Kase X Noko engraved into them, which I thought was a small yet nice way to make the experience unique. You'll be asked if there are any food allergies. (My friend has Celiac's and was able to eat every dish but one, which they gave her a hand roll instead of toast). (I also have a weird yuzu sensitivity thing and they were able to accommodate without messing up the integrity of the dishes). Omakase means I Leave The Details Up To You. So after you tell them if you have any allergies, just sit back and enjoy. They bring out fish after fish for you to enjoy. Around course 8 or 9, they'll ask if you want any of the a la carte additions. I am a lover of rice so I actually asked for a side of their sushi rice, which they graciously were able to accommodate. I really liked their Panda Panda Panda mocktail and the option to have a hot tea with my dinner. The base price is $75. I finally was brave enough to try and secure a reservation here for my birthday - I got really lucky that it was an easier process than expected! On the reservation, prior to my reservation date, and after being seating I was asked about any allergies, which was very thorough and luckily for me none of my allergens were present. The night I went they subbed the eel for freshwater eel, which was a real treat! Since it was my birthday, they did an extra piece of sushi with a candle, which was cute and appreciated! My first omakase experience. It was beyond amazing. The restaurant/room is impeccably styled and beautiful. We went to the small 4 seat bar first before the dinner. It was intimate and sophisticated. There were two chefs preparing the sushi and about 3 waitresses serving our seating of just 14 people. Everyone sits at the bar so you can watch them preparing the food. Each piece we were given came with an explanation. I tried a few things I never would have been brave enough to order on my own. Some I loved, some were not for me. But it was great to try it all. This is a great experience. Would make a great date night, I went with a friend for a night out, I saw a family of 4 there as well. Don't sleep on this. Amazing experience and great value! read more
