This is my go-to for really flavorful roast pork, char siu, roast duck and soy sauce chicken. Very authentic Hong Kong Cantonese flavor. The owner/chef will give you a sampling of the roast pork sampling if you ask it. So yummy!! They are located inside Oahu Market in Honolulu Chinatown

Merry Christmas and Happy New Year. For our Christmas Eve Dinner we picked up roast duck, roast pork and charsui. The two "aunties" who assisted us were so friendly. We sampled a piece of roast pork while waiting for our order. So delicious. They also have a meat counter. Loved the ambiance of Chinatown's meat markets and The surrounding shops and restaurants. As for the duck, roast pork and charsui, they were onolicious! I forgot to take a picture of the food but it was definitely enjoyed by all.

Tucked inside Oahu Market on North King st. look for the stall with the dripping golden pork, duck, chicken, and char siu on display. You know it's good when there is a line of kupuna waiting to order and that is how I stumbled upon Kams. Try it for yourself.

My mom's been going here forever for the roast duck and pork. Finally got the chance to explore Chinatown and I had to seek out her secret place. The butcher is super nice and friendly. Picked up roast pork today, Skin is super crispy and oh so soft and tasty meat. This would be sooooo good stuff into a french bread and cucumber. Yum!!!

Really nice lady and friendly service. Roast pork belly was hot and fresh. Skin was nice and crispy. Good ratio of fat to meat. Well seasoned. Kams is inside the actually market. Just walk into the building after the street side fruit stands and you'll find her... there... with glorious crispy pork belly.

Earlier this year, one of our good regular customers at my part-time job came to us super early. How early do you ask? We open daily at 10am and he showed up at 840am. I just got through disarming our alarm system and I was tidying up the front of the house when I see this guy approaching our door. Business hours are from 10am so I didn't find the need to unlock the door but when I realized who it was, I walked over to the door. He had a bag in each hand and handed it over to me. The bags were heavy and was advised the food came from Chinatown. He went to pick up some things for home and also got food for us. I am truly blessed with such great people around me. When I asked where the food was from, he replied "You know, the place behind Fong's Meat Market on N King Street. I knew exactly where he's talking about but couldn't immediately recall the name. I was now on a mission: On my next visit to Chinatown, I would check this place out. Come to find out, this place is Kam's Meat Market (KMM), where they are a butcher shop selling assorted raw cuts of beef and pork on one side. Then on the other side, you'll see an a display case of of roast ducks, char siu pork and slabs of roast pork hanging with some whole shoyu chickens sitting. I recall coming here many blue moons ago when I was sent on a mission to get beef tongue in Chinatown. I walked around many shops in Chinatown until I finally came across KMM, where they do carry whole beef tongue. While waiting for my beef tongue, I vividly recall the staff trying to drum up business when she offered a sample of their roasted meats to a potential customer. The strategy worked because this led to a sale. Regarding the roast ducks, I would rate this in the Top 3 of what Oahu has to offer. The duck was seasoned well and meaty. The skin was pretty good, too. Because I ate the duck hours later since it was purchased, I need to further investigate by purchasing a fresh one and eat it sooner. Overall, a very pleasant find and a great alternative in the event I am looking for roast duck. I do have my go-to place but they are closed on major holidays. I wouldn't hesitate to patronize KMM and am curious to try their other prepared foods.

Kam's Meat Market is a little hole in the wall store in the old Oahu Market area. I usually let my wife choose which stall to buy our roast pork from and we go and look at the all the Chinese roast pork stalls before selecting one and returning to a stall. It seems like at least half of the time she chooses roast pork from Kam's based on the skin and fat content. There is usually a small line waiting to be helped but you won't wait very long. The tested version we got had the perfect fat content and beautiful crispy skin. Their char siu is pretty good too.

This was the best roast pork ever! The char siu was also incredible! Came to this place thanks to my friends recommendation and omg I wish I had time to go back a second time during my days there. The roast pork skin was perfectly crispy, so much so that my sister ate up all the skin but whatever... the meat was so juicy and soft too. Char siu was also soft and not dry at all. Loved watching the lady chop it all up for us

To kick off Spring break and a surprised Birthday lunch for my wonderful boss, I wanted to add in some roasted meats to the lunch menu. The original business I wanted to get them from closed on Mondays, so plan B was to stop at Fong's but they had no roast duck left but only roast pork. I purchased the roast pork and then looked to my right and saw roast duck hanging and available, at Kam's Meat Market. I was in need of roast duck as it was on the lunch menu, I did a quick Yelp search to check the reviews and read a Yelp's friend 5 star review, so I walked over to get a duck. The lady who helped me was friendly, she also gave me a sample of roast pork to try but I declined, since I still had my morning coffee, which I didn't want to mix. I got my roast duck, which was nicely chopped and package in the box. The price for the whole roast duck is 25.00, I was going to pay via credit card the lady mentioned she will charge me tax which is $26.25, I just gave her cash. Kam's Meat Market is located at Oahu Market, the open market, It is towards the middle after Fong's. It must be hard to have 3 of the same business that sale roasted meats so close-by together. I would love to support local and small business so I would alternate every time I need roasted meats. Kam's also sale fresh meats which I think the husband handles the fresh meats and the lady handles the roasted meats. I am worried about cross contamination with handling fresh and roasted meats. Besides Roast duck, roast pork, char siu, and shoyu chicken are also available. When I arrived at the office, I set up the spread for our office lunch, my co-workers enjoyed the duck. There were only a few pieces left. The duck was tasty & tender, the pieces I got, had a lot of meat to bone ratio and the skin was just perfect. The only thing I didn't like was the sauce, it was too light, but just my opinion. I am use to and love the duck sauce from the RDK. Overall, I will come back here again, now that I have more options for roasted meats, I have plans to try the rest of the roasted meats,( per other yelper's reviews) during my next visit. Support local, I will be back soon!

The 烤豬 (roast pork) here is much better than at Fong's. Fong's is too salty and is hard not crunchy.

First off, the woman who took my order and cut my meats appeared to be the same one who left a very good impression on me years before. Everything went smoothly. I ordered all my favorites - a half pound each of char siu and roast pork, and a half roast duck. I showed her a photo I took of her cutting and asked for permission to post it on Yelp, and she said it would be okay. In the past, I would hand over my physical card and worry it would come back greasy. I was pleased that I could use Google Pay. The total cost was in line with what I had anticipated, reasonable. I hurried home since I hadn't eaten yet this morning. I had some of everything along with some hot rice I prepared at home. I started with the duck, which I ate as is, without using the included sauce. It tasted as good as I had hoped. I also enjoyed the char siu and roast pork. They were just as I like them. There is nothing like getting good, freshly roasted meats from Chinatown. I will be back.

My immediate circle has been having cravings and this includes shoyu pork belly. With a great base of aged shoyu, simmering slabs of pork belly will yield a yummy lunch, linner or dinner. Located in Maunakea Marketplace with neighbors of Papa's Cafe and Mei Mei Chinese BBQ, BM Meat Market (BMM) is a stall that specializes in fresh pork. They had a large variety of pork cuts, spare ribs, pork bones, pig's feet and congealed pork's blood. This past weekend I was on my regular shopping rounds in Chinatown and was purchasing some cooked meats from Mei Mei Chinese BBQ, where I patronize often. Many times I see many people crowding around BMM purchasing meats. But on this morning, it was empty so I decided to check out their offerings. I only saw one slab of pork belly that had nice marbling. I asked for the price, which came in at under $5 per pound. I asked the male staff if he had any more and walks back to his refrigerator to bring out a large slab of pork belly. ***happy dance*** I asked for a total of 6 slabs of pork belly, in which I noticed an end cut with lean meat that is not ideal for Chinese shoyu pork. I asked him to replace that with another center slice, where he didn't hesitate to my request. My total bill came in just over $25, which is much less than what my colleague paid at Safeway last week where that pork belly had excess fat. The meats I got at BMM had more in volume, better quality of marbling and eating meat versus fat. This clearly was a WIN WIN WIN in my books. BMM accepts cash and EBT cards. English friendly and with respect to COVID-19, they have signs posted and stickers on the floor to remind patrons of social distancing. Overall, a very pleasant shopping experience where I will be back for more for my pork needs. NOTE: I didn't see any pig liver, pig kidney nor pig head on display. Perhaps they have it stored in the back refrigerator. Try asking the staff if you don't see what you're looking for.

The game hasn't even started.... ME: What? HIM: You asked "Who won?" Sheesh, the misinterpretation caused me to wonder about my poor Chinese language skills...did I mispronounce or was my husband having a case of "stink ear"? I choose the latter reason. Anyway, Hoong Wun Butcher Shop has been a longtime O'ahu Market tenant. They feature island-raised pig, er, pork which is "sweeter" than Mainland raised pigs. As one would expect, this Chinese butchery will sell you just about every part of the pig as we Chinese will utilize "every part of the pig, except its squeal" in our cooking. I like marketing here and have done so for years because the pork is fresh, clean and well-trimmed. The prices are relatively inexpensive as we recently paid $2.50 for slightly more than a pound of ground pork whereas at local supermarkets, the same weight could cost $3.99/lb. Sure, this butcher is located in Chinatown and O'ahu Market looks run down but they do take the utmost care with food handling safety. They speak English and are quite friendly. Parking in Chinatown is always crazy but you have your choices at nearby municipal parking lots, metered or free street parking or private parking lots. Oh, while you're at O'ahu Market, go ahead to check out the other vendors such as Hometown Noodle Factory (they no longer sell noodles but make really good silken tofu), Troy Enterprise (fresh fish & seafood) and fresh produce vendor all within air-conditioned comfort.

Most other butchers in Chinatown do not have a sink, at least not one that I can see. They sell fresh island pork, not like the supermarkets with their mainland pork or pork injected with fluids, supposedly to make them juicy. They sell ground pork here but those have high fat content and mostly from odds & ends, here & there and from unsold day-old pieces. Select your own cut based on your preference for lean or fatty, have them wash the pork before grinding. You will pay more but like my sons said "good is not cheap and cheap is not good". Same thing when you buy the ribs, have them wash the bigger pieces before cutting into smaller pieces.

For the second weekend in a row, I was tasked to buy pork belly. Last weekend I went to my go to stall in Kekaulike Market and bought 3 strips of pork belly only to be advised it was "too lean" and not good to make steamed pork belly with harm ha (fermented shrimp paste). The "lean" pork belly eventually was used to make a different dish that made some employees bummed as they were looking forward to the steamed dish for that day's employee meal. This past weekend I went back to my regular stall and once again they had pork belly but indeed it was on the leaner side. I asked the boss man if he had any more pork belly as I wanted a fattier cut in his back refrigerators but sadly, none. I then visited the other 2 meat stalls in Kekaulike Market and the pork belly was too lean. My other options were to go to Oahu Market or to Maunakea Marketplace. Because I wanted to pick up some dim sum from Dimsum Village at Maunakea Marketplace, I proceeded mauka and entered Maunakea Marketplace from N Hotel St entrance and immediately came across Carnate's Meat and Seafood (CMS). CMS seems like a husband/wife team that sells fresh meats and seafood. The showcase on the left I found fresh pork nicely displayed and immediately found pork belly, but on the leaner side. I then asked if they had fattier slabs, where the male staff grabbed one from the middle and indeed it was fattier. ***happy dance*** However, because I had to feed 8 adults, I needed more. At first, he looked in the showcase and had none, but he offered to check his refrigerator behind him. He pulled out a large piece of unsliced pork where one end had fatty pork belly. Yes!!! I was so thrilled of the availability as it saved me time from walking around Chinatown when I had a list of other things I had to buy. I asked for 2 more slabs of fatty pork belly. He packaged and weighed the pork belly, and then paid for my purchase to his wife who was at the register. Because I was getting reimbursed, I asked for a receipt in which she obliged. While waiting for my change, I checked out their display and saw assorted packages of spices and mixes, as well as pre-packaged dried beans and grains. Seems like they were for Filipino dishes that I am not knowledgeable in. I took my purchase to my part-time job to receive thumbs up to make the steamed pork belly with harm ha sauce. It was sliced and marinated with some chopped garlic, fresh chilies, harm ha sauce, sesame oil, white pepper and cooking wine. It was steamed and we had a delicious lunch that day. Overall, a very pleased first visit where CMS came through in satisfying the critical staff at my part time job. They have refined palates where ingredients are key in cooking where variation and substitution are not forgiving. When tasked for fatty pork belly, I'll be sure to make my way back to CMS.
