It was served with homemade coleslaw and beans. The ribs were spread out on 2 pieces of very soft and fresh bread. To me that's always a sign of good barbecue if the bread is soft!! They were crispy, hot, salty, with just enough chives that you knew they were there but they didn't overpower. I dug into the burger as soon as I sat down. It was fantastic! The burger was cooked to a perfectly pink medium. The bacon jam was amazingly flavorful! I have no idea what burger sauce is but it was great. The lettuce and tomatoes were nice and fresh too. The sesame bun was nicely toasted and the cheddar cheese was nice and melty. I liked that the bun held up well and didn't fall apart while I was eating it. I was in burger heaven! They are at American Family Field when the games are on and around town when no games are scheduled and I found them at OPE! Brewing with the trailer. First off my car smelled amazing on the way home. Half the menu was already scratched off 2 hours and 20 minutes into their day. Everything is a la carte just so you know. After having BBQ all over the country with really good ribs 90% of the times the sides are average compared the the ribs so I didn't get any sides today. I ordered the half rack that has a garnish of pickles and pickled onions. My first thought was wow they left the tips on which most bbq places chop off so they can sell for more profit. My second thought was that's a nice bark. My third thought was that's a nice smoke ring. The 1/2 rack was a proper 1/2 rack with moist meat that comes clean off the bone. They didn't have that little chew that I like. The ribs were tasty with a nice smoke flavor that has a little kick finish. I can't speak on the rest of the meat's because I'm a rib guy all my life. Overall the BBQ ribs are solid and they have a place in the Milwaukee BBQ community. Did they de thrown my favorite BBQ no but I can get really good ribs with out driving an hour. Just a note the YouTube videos that show that really good looking beef rib you're probably not going to ever get from the truck because they said the last two events they didn't sell very well and I don't know if that applies to the American Family Field location.
