I had to ask how they were doing it, and Mark was more than happy to walk me through his process. When brisket is smoked low and slow -- and they smoke theirs for 20 hours -- here's what happens: * The visible fat cap mostly renders down. * The intramuscular fat melts. * Collagen breaks down into gelatin. * The melted fat soaks deep into the meat fibers.
