It's not pretending to be something it's not. You don't come here because it's touristy. If anything, it's an example and reminder of how we've forgotten the simple things in life. Sometimes, less is more. Simple is better. Get seated. Order coffee. Enjoy a few sips. Order food. Food arrives, freshly prepared. Service is quick, and efficient. You're not there to make a new friend. However, I'm sure if I ate there every week - which I easily would if I lived in the area - I'd know each of the staff by name. I have every intention of stopping there again when I'm in the area.
