    Brisket Eggrolls
    Amber D.

Owners Travis and Cherry are the most talented and amazing bunch. We had such amazing time at Dylan and Justines anniversary party watching you both perform. Not to mention the food! The food....is so good! We had the brisket eggrolls and burger special. Oh my gosh, so amazing! Like I cannot explain how good it was. Worth the stop if you are looking for a place to stop at! So good.

Crisp, dry, cold and refreshing apple-based sparkling beverages served up at a laid-back cider house with shade trees and wooden picnic tables. I drove past this place many times, reasoning that it must be some kind of gimmick - after all, Texas isn't really known for its apple orchards. Finally, while waiting for my order at the Thai food truck next door, my curiosity got the best of me and I meandered over for a tasting. The friendly brewmasters (cider masters?), a married couple with a clear passion for their work, educated me on the beverages I was about to sample. While the sign says "cider", it's technically "cyser", fermented from apples and honey. That combo gives it a bigger punch (9%) than typical cider. The apples come from Washington state. Here's the thing - I'm not really a mead fan, nor do I drink much cider, but I loved cyser! I usually avoid cider because it can be cloyingly sweet, but all of the Hye Cider products are actually quite dry (even Hye Note). If you're usually a beer drinker, try Hye Hops - it sounds strange, but it will blow your mind. A bottle is perfect for two to share at a picnic table - or you can get the cysers on draft (set to resume 3rd week of May 2020 as Covid restrictions ease). If you like Thai food, I recommend grabbing some green curry at the food truck next door and pairing it with the bay leaf cyser.

Great place!! Loved the atmosphere as it's super chill but lots is going on! Cider is delicious and we got a flight to try most everything. Can't say enough good things about our server as she seemed to know everything about the cider. She also mentioned how it's a small crew who runs the place and you could definitely tell by the comradely feel between the employees! Great place to hang out and drink some delicious ciders!

This place is dope! Co-owner Travis is the man for one! Ask for him and say hello for sure. They clearly love what they do here and it shows in the product. Amazing craft cider, 0 residual sugar cider, unique flavors, group tours, outdoor seating, growlers, bottles, flights, you name it they got it. Just a darn cool and fun place to hang out for seriously good cider. Also has partnered onsite Thai food truck as well. Smelled sooo good! Must try next time! Heavenly cider is my favorite of them all but Bay cider is also really good as well. The traditional cider that kicked it off for them is my top anytime cider to drink. Cider being my go-to over any type of beer, its nice to find a place that has all the stuff I like as the focus, not the details.

Cider flight, main taproom, garage style indoor seating, the big red double decker bus that you can see from the road

Happened upon this great local spot on a road trip through Fredericksburg. I'm always up for trying local cider, and I'm glad I saw the bright red double decker bus from the road. There's plenty of outdoor space, with seating, tables, shade and heaters and a great indoor reworked garage as well for getting out of the rain or sun in comfort, with interesting work by local artists. The cider is pretty great! It's their own, and local. Definitely worth a stop. They do flights and my favorite was the "Hye Heaven", an 8%, not too sweet and not too dry cider with local honey, fig and just a little black pepper. Their ciders are "cyser", a mead/cider hybrid made with honey and apples. As a cider lover, I liked it a lot. The flight is the best way to try 4 different ones, and pick your favorite. It's original, and it's tasty. Bought a bottle to take home. There's also the Hye Thai food truck permanently installed in the same lot, where you can get tasty, hot, Asian style fried chicken, bahn mi bowls, and other good eats. I got the fried chicken and I liked it a lot. This place is great. Nice atmosphere, good food, good cider, friendly service, fun live music on the regular, Sunday mimosas, local art, and a generally all around good vibe. Plenty of parking, clean restrooms, hand sanitizer, masks inside when ordering, COVID conscious staff too. Definitely recommend, and looking forward to returning next time I'm in the area.

I was kind of excited to try some cider, but the first thing they say is that they don't make cider but cyser. So maybe that's where it went wrong. I was expecting more of a cider taste but then it's more mead. The hye heaven was probably the closest to a cider in my opinion. Cute little place and nice people but not my favorite.

We went here with our son and friends to celebrate his new job offer. I don't care for Cider but tried the Bellini. It was sweet and tasted good. I also had Tai food from the food truck. The green curry shrimp was delicious. This is a must see place when visiting the Texas Hill Country.

Texas wine country isn't just about wine. A top notch cidery is here, and it is goes by the name of Hye. They combine an excellent product with superb and friendly customer service. Regular cyder and and some innovative cysers. Delicious!

Cider with high ABV is awesome. I had to use the restroom and stopped by this place. The inside has no heat just a heat lamp but the cider is awesome and the staff did a great job explaining the process. A flight is only 5$ and you definitely can't beat that. I would definitely recommend

Stopped by while in the neighborhood. Cherry (??) was an excellent taste tour guide. Thoroughly enjoyed the flight and took home a 6 pack. I'll be back next time I visit Garrison Bros. next door. Stop here and enjoy the cyser.

Spent two days enjoying some incredible cyser!! To the owners....thank you for the incredible Texan hospitality, atmosphere, conversation, and vibe!! Such a unique spot in the Texas Hill Country and a must to visit!! Highly recommend Hye Hops, Hye Bay and Hye Note.

Super cool laid back place to chili and drink something different then wine. Owners super cool and educated us on different ciders. They use local honey and peaches in some of the ciders. Highly recommend
