Our traveling companions stated that was is a must-stop on our way to our weekend wineapalooza weekend in Fredericksburg. We are not cider people so we prepared ourselves for a few tastings and then be on our way. In our defense, we have tried cider in the past and we both agree it does not fit our palette. Well, Hye Cider did not change our opinion but they are serving up some fabulous options. We did try their sweeter options but their Hye Stylin cider was our favorite. Hye Stylin is accurately described as crisp, and dry, and is comparable to prosecco or champagne. Our server was very knowledgeable and was able to accurately explain the characteristics of each cider. The grounds are pretty laid back with an outdoor patio and a comfortable lounge area. The food trucks were not open on this visit, it was early, but after reading previous reviews we may need to stop by later in the day on our next visit. read more

I drove past this place many times, reasoning that it must be some kind of gimmick - after all, Texas isn't really known for its apple orchards. Finally, while waiting for my order at the Thai food truck next door, my curiosity got the best of me and I meandered over for a tasting. The friendly brewmasters (cider masters?), a married couple with a clear passion for their work, educated me on the beverages I was about to sample. While the sign says "cider", it's technically "cyser", fermented from apples and honey. That combo gives it a bigger punch (9%) than typical cider. The apples come from Washington state. Here's the thing - I'm not really a mead fan, nor do I drink much cider, but I loved cyser! I usually avoid cider because it can be cloyingly sweet, but all of the Hye Cider products are actually quite dry (even Hye Note). If you're usually a beer drinker, try Hye Hops - it sounds strange, but it will blow your mind. A bottle is perfect for two to share at a picnic table - or you can get the cysers on draft (set to resume 3rd week of May 2020 as Covid restrictions ease). If you like Thai food, I recommend grabbing some green curry at the food truck next door and pairing it with the bay leaf cyser. read more

Happened upon this great local spot on a road trip through Fredericksburg. I'm always up for trying local cider, and I'm glad I saw the bright red double decker bus from the road. There's plenty of outdoor space, with seating, tables, shade and heaters and a great indoor reworked garage as well for getting out of the rain or sun in comfort, with interesting work by local artists. The cider is pretty great! It's their own, and local. Definitely worth a stop. They do flights and my favorite was the "Hye Heaven", an 8%, not too sweet and not too dry cider with local honey, fig and just a little black pepper. Their ciders are "cyser", a mead/cider hybrid made with honey and apples. As a cider lover, I liked it a lot. The flight is the best way to try 4 different ones, and pick your favorite. It's original, and it's tasty. Bought a bottle to take home. There's also the Hye Thai food truck permanently installed in the same lot, where you can get tasty, hot, Asian style fried chicken, bahn mi bowls, and other good eats. I got the fried chicken and I liked it a lot. This place is great. Nice atmosphere, good food, good cider, friendly service, fun live music on the regular, Sunday mimosas, local art, and a generally all around good vibe. Hye Cider is truly a diamond in the rough. It's also a perfectly set up during Covid, with an outdoor bar and tasting area. It's a place with personality and an unique point of view. We loved coming here after a few days of wine tasting in the area. It was refreshing to do something different for a change. The decor is sorta rockabilly-meets-Hill Country, and the vibe is oh so right. We loved meeting the owner and learning about ciyser, which is similar to traditional ciders but not like anything we had tasted before. He was super cool and down to earth, walking us through each one of their creations. We ended up bringing a bottle home for my parents to try. Another great benefit about tasting here is that there's a Thai food truck and plenty of tables for social distancing. I highly recommend the green curry. Would skip the Pad Thai next time. We absolutely fell in love with this place last weekend. Went with a group of people after volunteer bottling at Garrison Brothers, on Saturday afternoon. The cider is FANTASTIC! We all started by sampling the different flavors, 3$ a piece for a taste. The cider here is not cheap. 8$ a glass, but it is so good we felt it was worth it. Most cider places you go, you are lucky if you like one cider, but here it was challenging to choose which one I wanted! In addition, the workers/owners are awesome and super fun! They always have water games out, good music playing, and fun conversation. We had a water gun fight and spent an hour trying to construct a water balloon launcher. Ha. The grounds are really cute, and the owners put in a lot of personal touches and fun items. Huge fans. We even went back on Sunday to purchase a bottle to go. The ambiance is refreshingly different as Rock in roll melds into historic cars. I loved the original art on the walls that draws the cider shack and artistic maker experience together. Listen to the sweet tunes of old vinyl while you sip on their delicious dry cider. They just opened last weekend and have two amazing ciders on tap, Hye Note and Hye Stylin. Both are on the dry side, well structured, amazing taste profile and sit at 9% ABV. It's hard to pick a favorite. They plan to do some herbal ciders next, potential the first with a basil focus. The cider is made from organic WA state apples and a local Stonewall Texas honey. Hye Cidery is the passion project of a husband and wife team and close group of friends. We enjoyed the Hye Bay and especially the Hye Hops. I don't like beer, but the Hye Hops was a real winner, and I'm glad the person behind the bar convinced us to give it a try. It tasted less like a beer and more like a natural wine to me, with just a little funkiness. We ended up buying a couple of bottles of the Hye Hops to take home.
