This place has a modern yet nostaligc feel to it that i like. The staff is very knowledgeable and welcoming. They offer both cocktails and cocktails. The menu might seem limited but it's loaded with delicious flavors. I love that they offer both indoor snd outdoor seating options. I can only imagine this place during the fall sitting around the fireplace sipping a cocktail listening to music and the humdrum of conversation from patrons. Fredericksburg has lots f wineries, but this place has spirits. I'm normally a vodka gal, and they had a flight that included a taste of the raspberry vodka. The server could have been more engaging, but it was fine. The tasting room was small and pretty and well air conditioned! Bathrooms were nice and clean. While taking in the views of the beautiful lake at Das Peach Haus, we noticed Dietz Distillery next door. I was not familiar with Dietz prior to our visit, but we decided to go check it out and I'm glad that we did. I prefer vodka and gin so I was happy to see the cocktail options at the bar. I usually go for a G&T, but my friend's go to drink is the French 75 so I went with that instead. It was really nice and refreshing! The bartender was great! The distillery is small and quaint and has a cool laid back vibe. I loved the vinyl records on display. In addition to vodka and gin, they also make liqueurs and cocktail mixes. I've been coming to Fredericksburg for years now and Dietz's is a must stop every time we're here! The bartenders are amazing - so talented (YUM), welcoming, accommodating and just all around great. The ambience inside is so cool and cozy and their outside space is so lively- amazing views. They even have food trucks outside with the tastiest snacks and entrees. We visited Dietz Distillery on Saturday, September 10 at about 3pm with our party of three. It is in a location with plentiful parking, as it shares parking with a neighboring business. There were a few other people inside when we arrived. It is a small intimate building inside, with the attached distillery and a nice large outdoor deck/patio out back. The people inside the distillery are super friendly as well. The decor is casual/chic and is just plain down comfortable. Cozy would be a good word. There was a $10 tasting that day, where we got to try three different spirits - Gin, Brandy and Vodka. There is also a cocktail menu, where you could order hand crafted cocktails at reasonable prices. It was great talking to the distiller and learning so much about the business and the history. There is a comfortable seating area to sit around, chat and enjoy your cocktails. Overall, a great time and we would definitely return again. There are a lot of places in Fredericksburg to get your spirits, beer and wine on; however, make sure you add this one to the list. read more

The tasting room and distillery is adjacent to das peach haus (notably just featured in the Chicago Tribune) making the property even more of a destination than the stunning property already is. The small artisan distillery practices old world distilling techniques and encourages consumers 21+ to learn about the process and history of alcohol distillation as well as explore the expansive world of spirits. I am thoroughly impressed with what they are doing and equally intrigued to see what they will release in the coming year! Here is what they are currently serving: Five Judges Gin - juniper-forward, dry, London style gin made with Rio Grande Valley citrus that makes it uniquely Texas. It is named in honor of the five judges who have called the farm home over the past century. We could not leave without purchasing a bottle! You could literally drink this on the rocks. Loved trying something other than wine in Fredericksburg. Cocktail menu was great, but even better was a specialty drink from the creativity of the bartender that utilized their limited pear brandy. They even shared the recipe with us! Loved the atmosphere for a small group if you intend on staying inside the distillery. You even have a selection of vinyl that the staff let you choose to play. We had a group of 6 ladies on our trip and it was easy to communicate and book our tour with Moon's Voyages. We did the half-moon tour on a Saturday morning/afternoon. Ginger arrived at our Airbnb with the bus on time and after picking up other people at their various locations, we reached 4.0 Cellars for our first tasting. Our second tasting was at Hye Meadow Winery followed by lunch at Hye Market, where our lunches were ready on the table for us! We finished the day at Fat Ass Ranch & Winery before all being taken back to our respective locations. All 3 tastings were amazing! We never felt rushed or that we were on any type of time crunch. We were able to enjoy every glass and had no worries about who would have to be the designated driver. Ginger was so much fun and the absolute sweetest! Brandon was super friendly and knowledgeable of the area and the different things to do in Fredericksburg. He picked everyone up from where they were staying, which was awesome. The first place he took us was to was Fiesta Winery. This place was my absolute favorite! We were allowed to pick 6 wines to try and we got to keep our tasting glasses. I got lucky and liked all 6 of mine! The next stop was the Garrison Brothers Distillery. Bourbon on a wine tour?! Super unique. This consisted of a tour of the distillery and we learned how bourbon was made. We got to try it every stage of the process. And they also taught us how to enjoy a glass of bourbon. It wasn't my cup of tea, however it was a cool experience and my boyfriend loved it! For lunch, we had some awesome sandwiches at the Hye Market. Super yummy! Our last stop was the Hye Meadow Winery. Also a cute winery. We had such a great time on this tour. Brandon gave us his card and told us to call him directly if we ever want to do it again, that way we don't do the same tour twice. Vibe is euro-bistro and the staff is perfectly attentive. Prices are high, but honestly aligned to the quality of the food, at least the dishes we had were worth the prices. Food: Buttermilk Fried Chicken, with Onion/Bacon flash fried collard greens, whipped potatoes and house gravy and Jalapeno Cornbread for $32 Reuben on Marble Rye for $24 16oz Stella Artois for $10 We agreed that the fried chicken (5/5) was the best we could remember having. Whipped potatoes (5/5) were light, fluffy and perfect taste/texture. The gravy was like brown butter (5/5). The collard greens (5/5) were flash fried and if you've never had them like this, it's like eating collard green potato chips. Cornbread (3/4) was a bit too delicate and sweet for our taste. You couldn't pick it up without it falling apart. The Ruben (3/5). My wife loves a good Ruben sandwich. This one had the makings of a good one, but they use a Thousand Island sauce (too much of it) on the sandwich, and it hides the flavor of the meat. Next time we would ask for the sandwich without the TI sauce, see if that improves the rating. The sandwich came with house made potato chips (5/5), a small house salad with vinaigrette (5/5) and a large, pickled cucumber. I know, that's a pickle, but these are cucumbers that have gone maybe a third of the way through the process, so the cucumber taste is really prevalent. Lastly, we had the Creme Brulé (3/5) for dessert. It was nice, but the custard was coffee and caramel flavored, and we prefer the standard custard look and flavor. The caramel should come from the top layer, not the custard. The top layer was a bit too thick as well. We liked it, just didn't love it. Overall, quality food, service and vibe with prices that are aligned to more special occasions than everyday eating out. We'll be back to try the Monday Crawfish Etoufee and the Tuesday Duck Confit daily specials...look too good to pass up.

Dietz Distillery is an absolute gem! The atmosphere is inviting and the staff go above and beyond with their recommendations. I especially appreciated how knowledgeable they were about the drinks and how they took the time to suggest options based on what I liked. If you visit, you have to try the Pain Killer - smooth, balanced, and the perfect mix of tropical flavors. The Lemon Drop was another standout, refreshing and perfectly crafted. Both were spot-on and made it hard to pick a favorite. Overall, an amazing experience with incredible drinks and even better service. Highly recommend! read more

Dietz distillery is a must stop on any visit to Fredericksburg. Dietz is a maestro behind the bar. He takes time to explain the distillation process and mixes awesome cocktails. Elle is the glue that holds it all together. She has done an awesome job of making you feel right at home from the moment you enter. The location is perfect and holds a lot of family history including pine trees!!! It has become my home away from home. read more
