I've never eaten at Cava, but I have been to Zoa Mediterranean Kitchen. Hummus Republic is a similar concept with ingredients to build-your-own, personalized meals. You can choose from a bowl, wrap or pita. The only downside is that there isn't a variety of choices for meats and veggie toppings compared to Zoa and Cava (looked at their menu). I also noticed that they didn't serve much protein for a small bowl order. I chose chicken schwarma, which was cut in bite-sized pieces, but maybe only half a large serving spoon was filled. I found myself digging around my bowl searching for it. It would be extra for more protein.
They have great prices and specials with some extra fees for certain items. My small chicken bowl special was $9.95 and came with a drink. I added feta as one of my 3 allowed toppings which was .50 extra. You pick a base - rice, couscous, garbanzo beans, and/or leafy greens - spinach, mixed greens, kale. Then pick a hummus flavor - kalamata, harissa, roasted eggplant, zesty feta, and traditional. The meats are halal - lamb & beef gyro (combined), lemon chicken, chicken schwarma, crispy chicken, falafel, and mushroom schwarma. I got to sample the lemon chicken and that was tasty, but I chose the chicken schwarma. The toppings are chopped tomatoes, cucumbers, feta, beets, red onions, red/white cabbage, olives, artichokes, and hot cherry peppers. They had extra things like chickpea croutons, fried jalapeños, fried eggplant, and street mix (fried onions, jalapeños, olives).
For my bowl, I chose couscous, spring mix, roasted eggplant hummus, chicken schwarma chickpea croutons, chopped cucumbers, beets and crumbled feta. I topped it with tzatziki sauce and roasted red pepper tahini. It was delicious and filling despite having minimal protein. I absolutely loved the chickpea croutons!
There's a soda machine, tea and a variety of lemonade flavors for drink options. I chose the turmeric ginger, and it was so good. I make something similar at home, though hot. It was nice to see this flavor as a lemonade.
There's plenty of indoor seating, but I found that people took their order to-go or picked up an order placed online. It's quiet when dining in. I chatted with the employee who helped me who was so nice. This location has been open for about 5 months now. She said a lot of people come here from the gym for a healthy option. Chipotle is literally next door and tempting, but I would come back here for a work lunch. read more
