I have ordered from them quite a bit and product is always good. This year I ordered a Christmas gift for a relative, paid, and selected a delivery date shortly before Christmas. The day before the order was to ship a week later I received an order cancellation notice. No explanation. When I emailed them, their reply was simply "we're out of stock" No apology, no offer to contact the gift recipient, or offer an alternative product. I don't know if they can't manage inventory, or prioritize commercial accounts, or had a problem with product. But best not to trust them to deliver an order for a gift or a dinner party. read more

I've been trying for 5 days on and off, because they promised 10% off on a first order to sign up for an account, and a site pop up advertised and additional 10% (add was for 20% in April). They sent a brief thank you for signing up, but never sent a code or any information about either promotion. I've emailed them, but get no response. OK, so my vegetarian & vegan friends probably wont like me for eating Foie Gras, but I'm sorry I love this stuff. Some of the best duck products around. Here is what I had; duck salami, duck prosciutto, grade "A" Foie Gras, torchon, & terrine of Foie Gras. Exceptional!! The chef was great. He explained everything to me about the preparation of their Foie Gras. He assured me that everything is done humanely. He was great, he shared with me some Kobe beef another chef friend sent him. It was great!! I look forward to ordering from them. I have only had Foie Gras a few other times and this is the best I've had. Such a perfect smoothness and creaminess with a wonderful flavor. I understand some may not want to read this review, or even know about this place. However, for the rest see below. Hudson Valley is home to many interesting things, including Woodstock, Bethel Woods. The Borscht Belt, terrific hiking, and one of the largest foie gras suppliers in the US. Located in a tiny town just outside of Liberty, NY is a duck farm. Here they make foie gras for NYC top restaurants, and some in CA, Vancouver and across North America. If you are lucky enough to be passing by, call ahead and arrange a tour of the facility. It's interesting and clean. You can buy product direct from them, and they usually have about 80%of what's on the retail online store available if you drop in. It's better to call ahead and they will have the order ready for you, packed with ice etc, to pick up. You can also order online and have it shipped. They sell foie gras in many forms, but also duck breast, some other related things. All top shelf. Next time you review a menu ask where the foie gras comes from (it's often listed actually) and it's likely to be from here. read more

I know foie gras practice is not for everyone. But for those who eat meat, foie gras is a pinnacle and Hudson Valley is as good as I've ever had. I live in California but grew up on a chicken farm just 20 minutes from Ferndale. My Mom still lives there. When I realized they were so close, I had to see if I could visit the next time I was there. I called and to my surprise, they were happy to provide a tour. They have a fully open policy and Marcus Henley hosted me, my Mom, and some of my family for an hour-long tour. Nothing was off-limits. We saw the whole operation -- the coops, the chicks, the adults. We saw the feeding (gavage) and how the birds are processed. Conditions were very similar to my family's chicken farm in the 1960s (before cages were in widespread use). If you can't travel there, see the videos that they have posted on their website. I asked that this be served as an appetizer at John Elway's restaurant in Kansas City two days ago, as it was offered as a garnish to their steaks for an extra fifteen bucks. What I was given was a plate on which sat two pieces of toast, layered with 3/8" thick slice of this duck liver, topped with an egg and flanked by a sauteed mix of onion and shaved beef. I didn't order foie gras but ordered the Three Mountains Yellow Sriracha sauce after having eaten it at Momosan in NY. Couldn't find it at my local Thai Market but Hudson Valley had it on their site. Ordered it Sunday afternoon and received it Tuesday. Effortless ordering process and the shipment came very quick. The flat rate shipping just encouraged me to order more than 1 bottle. Why get 1 bottle when the shipping cost was the same for 5 bottles. Will definitely order again when I run out of my sauce. read more

Marvelous little company. Their customer service is beyond compare, and their product is superb. I have really only tried their bacon (i quit eating pork a while back, and do not miss it, except the bacon), and recently their Duck Bone Broth. Both are of the highest quality - delicious! Great Farm! Clean, open, transparent. It should be a model for all farms. This is obviously coming from a non-farmer but one must be open and understanding as to what you're getting yourself into when there is a butcher around. Marcus was an excellent "tour guide". No one should judge foie gras unless one actually visits this farm. It provides jobs, food, and standards of conduct that should be modeled after. The staff told us that the special was the Award Winning Hudson Valley Foie Gras. My wife was not a big fan but is now!!! OMG it was this off the hook!! On Point as they say on a popular TV cooking show. Great Product! So we decided to go to their great web site to check it out. The site works just as it should. Ordered 16 pc. IQF frozen Foie Gras Sunday May 19 and credit card charged $130 plus $35 for overnight delivery (only option available used UPS). Product shipped Monday May 20 with overnight delivery prior to 10:30 am Tuesday May 21. Wrong zip code (by one last digit) entered by shipper. Delivery delayed until Wednesday May 22. Product then left on truck and delivery again delayed until Thursday May 23. Delivered May 23 at 10:15 am. Interior temperature of container over 80 degrees. shipped in styrofoam container with 2 freezer packs, not with dry ice. Customer representative on Tuesday said product should be good for 48 hours post shipping and to contact company on Wednesday. Then representative called Wednesday with information that product left on truck and would be delivered Thursday. Offered to re-ship product at no charge. Offer refused. Do not trust UPS to abide by overnight shipping delivery before 10:30 am guarantee. Found another source that uses FedEx and packs with dry ice, which is much more reliable. Suggest company either use billing address for shipping label, rather than entering information by hand, use a more reliable shipping service for perishable items, and pack with dry ice, not freezer packs. Company has lost a potential frequent customer due to error in a addressing package and not offering replacement when first notified of delay in delivery. I will never use UPS for any shipping needs again. read more
