Eventually she is handed a waffle, though it's all she can do to stifle her frustration when she reads the name on the ticket, realizes she was accidentally handed someone else's order, and finds the proper recipient. Her father, after done perusing the other food trucks in the vicinity, stops by to make sure everything is okay. With utter disdain, she reveals she's been waiting for nearly Ten. Whole. Minutes. Nothing is made of it, and she is soon provided with her waffle. It is then I understand why "It's worth the wait!" is written among other encouraging statements in glass marker around the window of the man taking orders. Taking the cardinal rule of doing one thing and doing it really well, Waffle Wagon offers Belgian Liège waffles and nothing else. Fortunately, this is a novelty worth tracking down: this version of the popular breakfast food is turned into a confection by increasing the sugar content, culminating in tiny bits of pearl sugar that caramelize and provide an incredibly crispy exterior while the interior stays fluffy. It's a waffle that has the syrup built in. It was so sweet it gave me a stomachache after I powered through the whole thing. Waffle Wagon blurs the lines between food truck and carnival concession stand: it has no social media presence and given their extremely limited menu it's hard to imagine them finding an audience outside of tagging along with one of the other established food trucks, but they provide an opportunity to try something you're not otherwise going to find in Wichita, and they do it very well. You could easily prep some tenders or breasts ahead of time then dip them in batter and toss them in a fry daddy. It would take up very little space in your truck and immediately triple your business. Charge $9.95 for chicken and waffle in a paper dish and make a mint while making the patrons of Wichita deliriously happy!

    For two years I've been searching for this unicorn of a food truck. I'd see it occasionally -…read moreparked outside of an auto parts store on Oliver, or in the parking lot of a Walgreens on 37th Street, or maybe one time at Wichita East High (not that I could reasonably explain why a 30-year old man was hanging around a high school) - but by the time I could return with my wallet and an appetite, it was gone. They have no Facebook presence, and the only way to know where to find the truck is to call the owner and ask. I try to avoid making as many phone calls as possible, so the U-Hungry truck remained elusive. And then one month it finally showed up at Food Trucks at the Fountain, so I guess I won? You could tell this is U-Hungry's first time at the event based on the long line, which wasn't so much a function of their popularity as it was the tenacity of the people standing in it. U-Hungry wasn't used to processing multiple customers at a time, so you waited in line, made your order, and continued to wait at the window until your food was given to you. It's extremely inefficient for the three people that were working in there. The food served on U-Hungry is very basic, to the point where I don't think this is aimed at my type of diner. Tacos, hot dogs, a burrito, a wrap, a couple of fried seafood dishes, and a couple of cheesesteaks. I'm glad the wait was so long because it took me a lot of time to pick a couple of things that might represent the truck. I ended up going with a taco and a cheesesteak in the hopes that there might be something there prepared on the spot as the sign in the window claims. The taco is a seasoned ground beef served in a hard supermarket shell topped with lettuce, some tomatoes, and a generous helping of Pace salsa. The meat was seasoned well, but it was otherwise unremarkable. The cheesesteak was better - the slices of meat were tender, though salty. The cooked peppers and onions were a nice addition, though everything was contained within a wheat hoagie roll which wasn't even toasted, so you have this dense bread that in a best case scenario would soak up some of the juices from the meat, but in execution it wasn't great. As I waited in line I watched what the people in front of me were ordering. A lot of them had children, and a lot of them were ordering hot dogs. One guy behind me wanted to get the fried shrimp. I suppose during this food truck festival where every truck is going all out to create something crazy and distinctive, it's nice to see a truck that sticks to the basics, but I don't think I'm the target audience here.

Didn't know they were so popular in wichita. There was a nice alcoholic beverage truck which really should have larger cups for their bloody Mary's. There's also live music and the place is gated off so you can walk around with your drink. Shame it was hot, but oh well that's wichita for you in may.

The only place you're able to find German or Filipino food in this city is by standing in the great outdoors, waiting for your name to be called. You can also find some excellent New American cooking and brick oven pizza, too. They're not all easy to find, however, so your best bet is the monthly seminal gathering of pretty much every truck downtown at the Waterwalk the last Sunday of the month. The beauty of this event is that it's a one-stop shop for pretty much every food truck in Wichita. If there's one you've been dying to try, it's most likely here. The downside is that EVERYONE is here - the event "begins" at 11:30, but even then the lines are substantial. Lord help you if you show up around 1:00 PM, because by then the lines are astronomically long and trucks start to run out of their most popular items. They're set up to quickly deliver food, but not as fast as people can line up - you're dodging strollers and Duck Dynasty-clad hicks just to get the opportunity to wait in line for half an hour. Practically speaking, it would be less of an investment to go to a sit-down restaurant. One of the selling points of food trucks is speed, isn't it? Parking is plentiful, there's free music, and it's a fun time despite the wait. It's not as fun if it rained recently, because all of the grass turns to mud. But as an opportunity to try two or three different food trucks at the same time, there's little comparison. It's nice to see Wichita embrace food truck culture, even if this is the best and worst that particular culture has to offer.
