I've been eating Chinese food since I was a kid, for decades. My personal favorite was Kung Pao Chicken. The average quality has degraded to the point I can't find any Chinese restaurant in the local area I enjoy. Disappointed as I tried hard to like Hong Kong Express. I get times are tough and restaurants have to make decisions on ingredients. But if I order say, Cashew Chicken, it should NOT be 50% celery. In huge chunks like you're trying to choke people. And I shouldn't have to hunt for a cashew, it's not a garnish. Get rid of 3/4 of the celery and cut it smaller, subsequently increase the meat and cashews. You'll be getting closer to the original dish than what you try to feed people today read more
