    The brisket is my favorite but everything is good. The ribs fall off the bone. And it's priced right. I highly recommend!

    I drove by Hillbilly BBQ on my way up to a job for work. On may way back it was around 11AM and they had just opened so I stopped in. They are located in a trailer in a parking lot off the road. I ordered a 1/2 rack of ribs and finished it in about 2 minutes. It was very good and I should have just bought the whole rack. These ribs tasted more grilled than smoked but that isn't a bad thing. The only thing I would have liked better is a thicker sauce. It was a bit watery for me. The person working that day was very friendly and I will stop in again the next time i'm in the area.

    Remember to slow down and stop for the pulled pork sandwich.

    Yummy! We've been passing by Hill Billy's BBQ forever but never got round to stopping by (or being able to slow down early enough to stop!) Today was a let's just do whatever kinda day and we remembered to slow down and try it. And we are off to a good start! We ordered the pulled pork BBQ sandwich and we were immensely satisfied! Juicy and tender. It was a hefty serving. We were happy that the bun really supported the meat. We particularly loved the smoke level. The sauce was well balanced. We tried the hot version and hubbykins loved it. We will definitely be back to try their other meats! We will just have to remember to slow down. Hahaha! Thanks for the wonderful food!

So perfectly seasoned is the meat that I never use any sauces or condiments. I usually get the collared greens as a side. They don't have a truck, but have a small tented area where they display the menu, take orders and pay (credit cards accepted). Then next to it is a large wide smoker and a table where you hand over the receipt and collect your order. They offer pulled pork, brisket, ribs, chicken, roasted hog and sides (baked beans, mac & cheese, coleslaw, cornbread, etc). They use their own special dry rub, so this BBQ is not dripping wet. They do have several BBQ sauces to add to your food. The baked beans had a pleasant kick to them. I do think they should use a nice brioche roll instead of the average burger roll. I've had a lot of different BBQ from various states in the country and this was better than average. About an 8 out of 10. I was glad to see no fatty pieces in my pulled pork, but my husband found one in his brisket. That's just a matter of making sure prep is perfect. At South Mall, there are no chairs and tables to dine. So bring your own portable ones and dine near your car or take it home. The entire area is blocked and all the trucks/tents face the center of the large rectangular area. Worth checking out.

I first came in contact with food made by Brad and Tim, (the owner and operators of the Trè Locally Sourced food truck), when they made and were responsible for the food at Cafe Frais. At the time they were using the kitchen as their commissary as well as cooking for the cafe. Unfortunately the cafe was shut down after about a year of operation but Trè Locally Sourced continued to flourish. They have now been in business for two years. The reason I am familiar with all of this is because our daughter, who lives in Emmaus, was the baker for Cafe Frais. In addition to doing all the baking for the cafe she eventually became the manager for the front of the house. When the cafe closed she started to work exclusively for Trè at various events. This is why I knew that Trè was at the Yergey Brewery this past Wednesday night. I went up to Emmaus to bring our grandchildren home for the weekend. Everyone was hungry, Since I already knew that Trè had good food we stopped for dinner. This is our honest review that we also posted on google. "My, my! I stopped at the Tre Food truck at the Yergy Brewery tonight and scored some dinner for my 3 grandchildren and myself. WOWSER!!! Brad and Tim are the guys from Cafe Frais so if you were feeling a little sad about losing out on their great food you can just follow their food truck around. My 11 year old grandson and I had the beef empanadas filled with grass fed beef and served with some mayo with a kick and pickled jalapenos and carrots. Description on menu: local grass fed beef/wild fox farm potatoes/olives/peruvian hot pepper, aioli/salad Confession: I'm gluten free but since I was going to open my gluten window tomorrow (for Thanksgiving) anyway I figured why the heck not? I should tell you that you get 2 very nice sized empanadas. The empanadas were great! We both chowed down on them. My grandson said, "The shell had a good texture. The filling was flavored well. The spicy mayo was a good touch. The pickled veggies complimented it well." He would prefer the veggies to be pickled a bit more. This is a kid that eats cold raw sauerkraut with his pork roast. The menu description: citrus poached shrimp/shaved lettuce, and pickled red onions on a toasted pita. I traded her a bite of my empanada for a bite of her sandwich. Once again Tre nailed it. The granddaughter said that the shrimp had nice fresh dill and it was cooked well. The pita bread was great. She didn't eat her pickled onions. (I'm about to go in and nab them..... They were smokey, which I wasn't expecting. I'm not sure I liked them.) My 14 year old grandson ordered the pulled pork. Here's how it was described on the menu: 24 hour braised pork/dijon bbq sauce/chef side (which was coleslaw). To be truthful this kid is not the most adventurous with his food choices. When I asked him if he wanted the chef's to put the sauce on his pork he said it sounded great. Here are his exact words after eating his sandwich: "The pork was cooked perfectly and it was nice and juicy. The bun seemed a little bit stale. The sauce was amazing. The slaw was decent." You have to know that this boy does not eat coleslaw, EVER. Stupid me forgot to tell the person who took the order to keep it off the sandwich but it turns out he ate it without a word! My good friend Andy and I were early strong supporters when Quincy's Lobster Rolls set up their first area shop on Swedesford Road, Berwyn, and were sad when it closed. This year someone opened same franchise in Paoli, but the sandwiches had shrunken in length, were no longer stuffed to the gills with pure claw meat like before, and portions were notable smaller than what we remembered. Enter Cousins Maine Lobster Roll food truck of PA and Delaware, (found on Facebook under "cousins maine lobster delaware / pa" for days/locations, nearest to me Exton Mall, east side across lot from Boscov's parked next to the loop road around mall). They serve up exactly what I used to love about Quincy's (before they cheaper down their sandwiches with smaller rolls, smaller portions, and cot in a lot of lobster meat scraps not from the claw!) For just under $21 you get a 5" frankfurter roll(the proven best vehicle for lobster!) overstuffed with nothing but fresh, tender and delicious Maine lobster claw meat. They have a very broad and interesting menu that includes Clam Chowder, Lobster Bisque, lobster grilled cheese, lobster tots, lobster tacos, shrimp tacos, Lobster tail and Tots, Lobster Quesadilla, or you can set up your own make at home Lobster Roll Party with everything you need to serve one or two pounds of Lobster claw meet with everything you need! (THAT has "Super Bowl Party" written all over it, and how memorable will that be with your appreciative guests! ) Having the Maine Lobster roll today at the Exton Mall location for the food truck turned me into an instant strong fan, but also refreshed my memory of what I USED to get at the original Quincy's, to the point that I went back and revised my review (and score) for Quincy's Paoli!
