Located on the main square in Lockhart Texas, Barb's is one of 11 different BBQ places in the…read morevicinity. The competition is steep, and with TWO different Black's BBQ places in town, any restaurant daring to go into this culinary cuisine would be expected to fail.
Out baseball team was celebrating yet another completely dominating victory and had worked up quite the appetite running around the bases and scoring. We have been to most of the other BBQ places and wanted something new. We got it.
To the uninitiated, Lockhart, Texas is a patriarchal pantheon of smoke. For generations, the holy trinity of Texas barbecue has been guarded by historic, soot-stained institutions where the aesthetic is strictly brown, brick, and hyper-masculine.
It was easy enough to find due to its unapologetically vibrant pink signage. This rare, woman-owned smokehouse is one of the best surprises I have experienced in Lockhart, which is a lot more than I can say for the speed traps in and out of the town. This isn't some vegetarian food despite the pastel colors, it delivers some of the most technically precise, high-caliber smoked meats in the Lone Star State. Put it this way - Stubbs and Valentinas were consistently 1 and 2 among my rankings. Other Texas venues like Goode BBQ, Salt Lick, and Pig Pen are all in the top 10.
Barb's is a masterclass in pitmastery that earns a definitive five stars.
The execution of the proteins reveals an exceptional understanding of fire management. (I missed out on the signature Lamb Chops, which ws so unique an offering I had hoped to try it! But you gotta get there early.)
The chopped beef is a triumph, heavily punctuated by deeply caramelized, heavily seasoned "burnt ends" bark--a texture and depth of flavor that anyone raised on Texas BBQ will instantly understand and deeply appreciate. The pork belly and sausage are equally stellar;
(I didn't see Pull Pork on the menu, but the Pork Belly was quite good too, offering a flavor that made me think of that cute rascal Porky Pig as I dined on it!
The meats possess an impeccable structural integrity that collapses effortlessly upon the palate, yielding a clean, slightly tangy-sweet smoke profile that balances everything out. In fact, the meat was so tender, that I told my wife I could probably suck it through a straw. When we got home, I actually did, and yes, it falls apart so well you could actually do it. This is excellent to know - especially as I get older and older, I have to think about how to take good bbq down without having to chew it. Thanks to Barb's - A blender will not be needed!
--But the true avant-garde moment of the meal belongs to the barbecue sauce. Moving far beyond the predictable, , Barb's serves a non-traditional, incredibly smooth, creamy sauce.
This is something else. The first thing you notice is the golden color, not the deep red you often see - then the flavor. I detected sophisticated undercurrents of mustard balanced by the warm, aromatic notes of anise, cinnamon, and a whisper of vanilla. While the exact formulat remains a secret of the kitchen, the result is an incredibly balanced, mouth-watering eruption of complimentary flavors that do not overpower the meat but bring out the best in it.
Speaking of food you won't have to chew, the chocolate pudding is special as well. I have one culinary observation - You get a choice of strawberries or a cookie crumble (I am fairly certain it was an oatmeal cookie crumble).
Here is where even this can be tweaked a bit. I think chocolate is one of those Alpha flavors. It needs a supporting taste, not another rAlpha. Both the Strawberries (which I didn't have) and the cookie crumble (which I did have) tried to overpower the chocolate. My tastebuds were dancing around my mouth trying to figure out what they liked more. Even then, taking pudding and doing nothing with it makes it, well, pudding. Even the word 'pudding' is bland. I admire the efforts to dress up pudding into something more than it is, bit with chocolate, it might be better with a vanilla sugar-cookie crumble with caramel mocha drizzled over the top.
You won't spend anywhere NEAR what it is worth here. If you are like my in-laws fro Arkansas, you can bring your basic nuclear family, all 19 of them and their two hunting' dogs and pet bob-cat, eat all you can handle, and not lose the mobile home in the process.
The thing I always say is that great service will always get me to come back. The Sunday crew was OUTSTANDING and I cannot say enough for how well they knew the menu and the pride they take in working there. The restaurant has a walk up service and a few dozen tables, and on a fall Sunday with your victorious, mud-stomping, winning baseball teammates - there's nothing that taste better than the sweet taste of victory and a great bbq place in the town square!
