The walls and decor make you feel both the history and life today. Everyone is so nice and you can tell they all work hard. It was very busy when I went, but also very organized. The market offers breakfast sandwiches, coffee, and muffins in the am. On the weekends they offer donuts too. For lunch they have pizza, grinders, and salads. They also sell local products like granola, coffee, and so much more! There is live music on Saturdays along with local artists selling prints. It's an all around beautiful place with a great vibe! Parking is hard in GB, which can be a downfall.

The space has a cool rustic feel and is great for some nice conversation. Now, the food: literally the best sandwich I have ever consumed. I tried the tomato & mozzarella one and literally haven't tried anything else on their lunch or dinner menu because it is the perfect sandwich. Their focaccia? As bread? Yes. I have also been blessed enough to have their breakfast sandwich and honestly words cannot even capture that experience so just order one yourself. The bevs? I am a beverage lover and have been severely disappointed and let down by neighboring local establishments when it comes to their matcha and iced coffee selection. But Robbie's? They've done it. An incredible matcha. A spicy iced chai. Incredible iced coffees. You couldn't ask for more. The service is also absolutely amazing. I came for breakfast right at 9AM on the first day they had earlier opening and it took them fifteen minutes to make my breakfast sandwich -- which isn't even a long wait when compared to other GB sandwich shops *cough cough Rubi's*. And they're were so kind and appreciative that I waited they gave me a little breakfast oat bar on the house (which was also incredible and warm and tasted like the concept of breakfast, if that makes sense). Also -- they serve Pastries by Hanna AKA the greatest donuts known to man. Like maybe go just for those on the weekends. Overall, they're amazing and will grow tired of seeing me.

Ilsa (pronounced Il - sah) is a feminine name, and was chosen by one of the founders -- Lucas Smith -- in honor of his grandmother. CONCEPT: The addition of a cafe in a former auto repair facility in downtown North Canaan invites customers to experience coffee varieties, as well as pick up some unique culinary products that are artfully displayed along the cafe's perimeter. AMBIANCE: Bright yellow cafe tables and chairs are scattered across what was once the auto mechanic's work space. Ample sunlight streams through two glass garage doors. EXPERIENCE: Outside of the effort to cap a cup with a decorative pour of steamed milk, a visit to Ilsa Coffee will make prior coffee house experiences to appear careless in comparison. During my visit a macchiato was ceremoniously served on a wood tray in an amber glass with a side of sparkling water. The owners, Lucas Smith and Rebecca Grossman, have chosen a roasting method that amplifies the inherent flavors of the harvest. Combined, this results in a special coffee house experience. TIPS: Ilsa Coffee has opened its doors to periodic pop ups that feature the talents of local culinary artists. This is a great way to learn more about the surrounding community. During a mid-February pop up two local chefs prepared a special brunch menu, while a potter sold "seconds" of ceramics in the cafe dining area. Bags of Ilsa Coffee are available in the storefront location. Be sure to include North Canaan when using GIS as I was first directed to 35 Railroad Street in Canaan, around ten minutes away.
