Sushi here was fresh and delicious. Pricy though but for a resort hotel it was expected. When we got to the bar to order our sushi,we asked the bartender if the white bottle was what they considered a "sake bottle" she said yes. Some places do consider that size a large. We thought $30 for that, ok. That bartender switched out with a new bartender during shift change and the new bartender stated that "our bottle" was in the heater. Thankfully my Mom caught that. $30 is for the full size bottle.

I sat at the sushi bar and my roll was fantastic! Highly recommend coming here during your stay at the Hilton. Chefs behind the bar were kind and funny! Perfect night out while staying in.

These dudes know what they're doing for sure!

I cannot say enough good things about this place! It seems very underrated being inside of the Hilton but this place was one of the highlights of our 6-night stay. We had dinner at Sandcastles mid trip and since you can also order from the Hadashi menu, we had one roll and an order of nigiri as an appetizer. We immediately knew we needed to do a sushi only night so we planned it for the last night on my birthday. It did not disappoint. Two sushi chefs cranking out some of the freshest and tastiest sushi we've ever had! And we eat a lot of sushi. I don't usually eat wasabi and use the ginger, but this place converted me. The pink lady roll was probably my favorite along with the bluefin nigiri. We also had the shaggy dog, wild spider, and sun kissed which were all delicious! Those crunchies are something special! Not just your usual tempura flakes. Can't wait to come back! Quick note on service - it can be pretty slow or maybe they were just short staffed the week we were there (mid-August, end of their busy season?) - but do not let it scare you from trying this food! Lastly, note that the servers do not tip share with the sushi chefs (I guess since they also serve from the Sandcastles kitchen) so we tipped both separately. There was not tip jar at the sushi bar, but they can accept tips and were very appreciative.

Avoid this place if you want edible food! The sushi was gross. The fish was not fresh. Truly shocking because this is in a hotel that is on the beach. Grocery store sushi is better than what we got. I will never return here because I'm so grossed out.

Well if you're here for the sushi, fabulous, excellent sushi, buy don't leave without trying the Blueberry Mojito, may just be the best cocktail out there, and have Susan muddle one up for you without the simple syrup, don't need it won't miss it ! Only problem is it's just not a sipper, too good, but at $10 not a problem having a second one..... cheers !

Good sushi from the 2 times we've gone. The vegetable roll is refreshing. Tempura rolls are good. Would come back.

Every single part of the service was attentive, warm, and made the whole night feel so special. It is worth every bit of the price tag. What impressed us most was the consistency; every course, from starter to dessert, was just as incredible as the last: Bread & Starters: The fresh bread comes out warm and soft. We ordered the lobster spring roll, which is so unique, delicious, and a total must-try. The burrata was also amazingly fresh and flavorful. The Entrees: I am not typically a big fish person, but I ordered the special redfish dish topped with crab. I can't even remember every single component the server explained because I was so blown away; it was easily one of the best things I ate the entire trip. My husband got the filet, which was pure perfection: beautifully seasoned and cooked to exact temperature (medium). Kid-Friendly: Even the kids were taken care of with delicious grouper and shrimp with fries. Dessert: We finished with the peach cheesecake and strawberry shortcake, and both were the thing of dreams. If you are looking for top-tier food and service in Destin, Bijoux is an absolute must-visit. We arrived 15 mins late & once at the restaurant requested outdoors because indoors was very cold. From the few mins standing inside the place looked very nice perfect for a nice dinner or a celebration. We were the only people sitting outdoors. Our waitress kept checking on us however, I have never drank about 10 glasses of water waiting for my dinner. We placed our order at 8:10p our food didn't arrive u til 10pm. Unacceptable! We had to ask twice for an update. Once the food arrived at once some of us our meals were warm or not warm at all like the potatoes & broccoli which was my dish. I guess they have them sitting under a lamp waiting for everyone's food to be done. After we were done & requested our checks they had the nerve to include the 20% on each check. Was 20% deserved ? Absolutely not. A total of 3 hrs sitting there. Our server asked her manager to remove it c which they did & we gave a tip we felt was appropriate. She was not happy & stormed off. What if the outdoor space was packed? Would the service have taken 5 hrs? Very disappointed with this restaurant

When we received the bill, it seemed higher than expected. Upon asking for clarification, we were told there was an 8% "packaging fee," which exceeded the local tax. This charge was not itemized as a packaging fee on the receipt--only listed as "8%"--and there was no explanation provided. Since it had been a long day and our order was already prepared, we chose to proceed with the purchase. What concerned us most was that this fee was neither disclosed on the website nor mentioned when we placed our order. We only became aware of it after questioning the total. Greater transparency would have been appreciated. If such charges were clearly communicated in advance, customers could make informed decisions. While we understand that restaurants operate with tight margins, unexpected fees leave a negative impression and ultimately influenced our decision not to return. We have enjoyed the food in the past, but at this price point, we would likely explore other options that we feel offer better overall value.

The weather was a beautiful 70 degrees, and we were lucky enough to get a table with a great view of the beach and sunshine. We ordered the fish tacos and the grouper bites. The food came out in a reasonable amount of time and was piping hot. The fish tacos had a generous piece of fish on each taco, grilled perfectly. My friend ordered the grouper bites and OMG -- they were lightly battered, cooked just right, and you get so many! Definitely a must-have. Now for the service. Our waitress started off strong by promptly taking our order, but unfortunately it went downhill from there. Once we received our food, she never stopped back to check on us or offer drink refills. There was only one bartender and the place was packed. He appeared overwhelmed, especially with beachgoers walking up to the bar while also trying to keep up with drink orders from the waitstaff. It didn't seem like the servers had assigned sections, as tables appeared to be seated in rotation. Toward the end of our meal, we noticed not only ourselves but other diners trying to get their waitress's attention, which was difficult. Overall, I'd give the food 5 stars and the service 2 stars. I understand it's a beach atmosphere, but with spring break starting, the service really needs to step up its game.
