I did the Groovy Grape "Desert Patrol" from Adelaide to Alice Springs tour years ago. Our guide was Steve who is a good guy who made the whole experience worth while.
Highlights include the Flinders Ranges, William's Creek (pop 7), the opal capital, Coober Pedy and finally Ulura and The Olgas before finishing up in Alice Springs. Total trip was 6 nights.
Food and accommodations are included in the price. You sleep mostly outside in swags (with the Dingos) plus one night in an underground hotel in Coober Pedy. Meals are prepared on site so be expected to help cook and clean up. Beer is optional.
This is a very laid back tour geared toward backpackers and other budget travelers, so don't expect any luxuries here. There is also a lot of hiking, so being in physical shape is helpful.
Steve was especially helpful in Alice Springs as my hostel was overbooked and he was able to get me in at a different location. He even took us all out for kangaroo after the tour was over.
