There are plenty of delicious bakeries in town, but Gleba is special. Not only is it artisanal, but they purchase heirloom strains of grains directly from small Portuguese farmers and grinds them in house in stone mill, using the flour hours after grinding to make the bread. The dough is fermented for 24 hours. All this care and extra work makes it markedly different from your average bread made with mass-produced flour in faster method.
One bite of the sample, and gosh, this really is a bread that put most bread to sample. The crust is so crispy but not hard, the inside crumb is light, very bouncy and flavorful with the tanginess of a good sourdough. They have about 4 different types of bread. We expect the bread to be more expensive but it's just 2-3€ for a large, hefty loaf. The staff is very nice and speaks excellent English.
Sadly, the bakery is only a retail/wholesale outlet. There is no seat or table for you to enjoy the bread right there. We did take a few loaves for later.
