This place is ok but not very good. The Tantanman has a decent flavor base but you MUST brighten it up yourself with a few splashes of vinegar and some shoyu (unfortunately they do not have Tamari).
Unbelievably they do not have Tonkotsu Ramen on the menu which is the pinnacle dish in ramen culture and the ultimate tell of a ramen shop's quality (good homemade noodles are child's play). Likely because they don't want to dedicate themselves to making the broth.
We ordered the Gyoza; they completely forgot. We reminded them and asked them (in native french) NOT to hurry, rather to take the time to cook them properly. They rushed and gave us partially raw Gyoza which were soggy on the bottom. 3 minutes later the table behind us got a plate of crispy bottomed golden brown Gyoza. We didn't finish them and told them the dough was still raw, they looked, said "Oh yeah you're right, sorry" and left the charge on the bill. When you serve a dish incorrectly you don't charge for it, basic restaurant etiquette.
If it's cold outside and you want nice chicken soup, this is good. If you want great Ramen, not sure where in Toulouse but I'm certainly searching. read more
