Unbelievably they do not have Tonkotsu Ramen on the menu which is the pinnacle dish in ramen culture and the ultimate tell of a ramen shop's quality (good homemade noodles are child's play). Likely because they don't want to dedicate themselves to making the broth. We ordered the Gyoza; they completely forgot. We reminded them and asked them (in native french) NOT to hurry, rather to take the time to cook them properly. They rushed and gave us partially raw Gyoza which were soggy on the bottom. 3 minutes later the table behind us got a plate of crispy bottomed golden brown Gyoza. We didn't finish them and told them the dough was still raw, they looked, said "Oh yeah you're right, sorry" and left the charge on the bill. When you serve a dish incorrectly you don't charge for it, basic restaurant etiquette. If it's cold outside and you want nice chicken soup, this is good. If you want great Ramen, not sure where in Toulouse but I'm certainly searching.

The chef cooks almost in front of the 8 people that are able to have a table in the tiny restaurant (make a RES or you will never have a spot). BTW, this place is only open on weekdays at lunch. There was another interesting dessert kind of like flan with fruits, it was tasty. I can't give it 5 stars because the place is so small, you have to move constantly to let the waitress go past your table and then back when she goes back in the open kitchen. I was able to get a reservation same-day on a Saturday night, and they held the table for me when I called to say that we would be late due to traffic. My husband had gyoza, chicken yakitori, a California roll and some sushi. I had one of the combos, with a miso soup, cabbage salad and scallop tepanyaki (stirfry) with rice. The cabbage salad was delicious with freshly toasted sesame seeds. My scallops were perfectly cooked, moist and sweet. The accompanying veggies were a little too soy-sauce-salty but were mostly good (mushrooms, zucchini, etc.)

The first menus -available at night too which is rare and cool- are around 12 or 13 euros. I've never seen that in another Japanese restaurant in the area. The menus are very traditional, no crazy combos here: straight up salmon, or tuna, no "modern" associations. The cabbage salad and rice served on the side are good. The brochettes are pretty good but I'd stick with the sushi! Also, I would skip dessert, no mochis here or japanese icecream. I tried one super sweet dessert once thinking it would be a soy or red bean filled ball shaped pastry but it ended up being squares of a fruit paste it seemed. Too sweet and not tasty. Had never seen that! I also had a dorayaki once: a flat pancake filled with red bean but it was dry, nothing like mochi/daifuku. The restaurant is tiny, so it's good to book before coming. There are few tables on the sidewalk/terrace and also another room across the street but that room is far less nice that the main one: very impersonal, no decoration, dark, no windows, you get the point... The staff is so fast, you see they are used to serving lots of people all the time. They almost take your plate when you put your fork down to pause (U.S. style :-) ) You can pick-up menus for a ten percent discount, which is nice. I recommend this place when you're craving sushi ;-)
