    Beef Lasagna
    Ken N.

After several attempts to eat here during the lunch hour, I was able to finally arrive on a day they were open (my biggest complaint is that even though I checked their posted hours, the lights were off. The good news is that I am glad I kept giving Fresko a try. I ordered the Beef Lasagna which was really tasty and though a bit pricey, I received a generous quantity of enjoyable pasta. The lasagna was so tender that I didn't even need the knife to cut it. Fork tender and nicely seasoned ground beef with a red sauce that was balanced between sweet and salty. I would gladly return to see what other items might win me over. You can get orders to go or make use of the open seating of the Amp food court. The Amp is one of my favorite places to go in Indy because of the innovation and collaboration that happens amongst vendors. Fresko is a great example of that, not only do they collaborate with the vendors but they source from other local places in Indy like Che Chori. Add this to your list as a stop- order one of their many excellent kinds of pasta but also just make sure someone gets the loaded fries... because well they are excellent and so filling you could almost split them. Not sure why you would do that but YOU could I guess.

Just stopped in to try a new spot and was pleasantly surprised with the entree. Deal is 2 slices and a drink for $11. Delicious! Don't think this is all they have, they do pasta and sandwiches. It's worth the stop

So much on the menu looked good, but we only tried the Churipan and loved it! We had it bun-less and still enjoyed it.

They give you a pager while waiting for your food which is great so you can explore the rest of the AMP.

Man, was I glad to see the Caveman Truck parked beside the Speakeasy after a few beer samples at…read morethe Indiana Tasting Society event! The menu offered a few different foods with multiple choices on sizes (by the ounce), and the lovely hostess taking our order was delightful. We had a really hard time deciding what to get as everything looked reeeeeeally good, but we opted to split the following: *Bacon Hash -- 4 oz for $4 -- well worth it! *Barnyard chili -- 8 oz for $7 -- pricy yet tasty *Jicama Tacos (one chicken guac and one chorizo aioli) -- 2 for $7 -- messy but pretty good *Fudge bites for dessert -- $3 for one -- dark chocolate, peanut butter, banana, sea salt, and applesauce mixed and formed in to a hockey-puck type solid mass. It was not really sweet like I expected, and kind of hard to eat. Probably wouldn't get it again. Next time I will totally get the Brussels Sprouts for myself when not sharing with the hubs :) I would say overall this was a 3 1/2 star experience for me as it was over $20 for 'snacks' and we were still hungry afterwards, but a star bump for using real, quality ingredients.

Still, I'll support a paleo food truck when the truck has "bacon (greater than) gluten" painted on the side of it. That's one way to get my attention for sure! On our visit my boyfriend and I shared two tacos--one chicken, one chorizo--fried plantains, and the brussel sprouts. I have so many nice things to say about all three. Instead of corn or flour, Caveman Truck uses fresh jicama as a tortilla to hold its protein + slaw + guac/aioli. It's the perfect starchy alternative to cut through the good greasiness of the chorizo. The plantains are not only fried in coconut oil beautifully, but also they are caked with a curry-based seasoning, providing you with a sweet plantain that also has some savory elements to it. The brussel sprouts--my favorite of the three--are fried in coconut oil and topped with an overload of crumbled bacon and a spritz of lime. It's a little bit of fatty, a little bit of zesty and a whole lot of flavor. All three dishes knocked it out of the park. From here on out, I'll be keeping an eye out for the Caveman Truck on the streets of Indy, because I still need to try the highly-praised barnyard chili and bacon hash. If this is how our ancestors ate, then I can't wait to eat the primal way again!
