Wow, here's a pizza you don't find on every street corner, every town, and not even every state. And it's made in a food truck. I got two pizzas. First, the Margherita with sauce, mozzarella, Pecorino, basil, and extra virgin olive oil. Amazing undercarriage, super crunchy on the bottom. Fresh ingredients, and the pizza was satisfying without being heavy or greasy. The Amatriciana has their tomato sauce, mozzarella, pork guanciale, sliced red onion, pecorino cheese, and crushed red pepper. Spicy and succulent flavors. All I needed was a lot more pecorino! Size wise, a person could take down a whole rectangular pizza if they're decently hungry. The pizzas cost anywhere from $12-16. Two tips. Parking is a mess, so be patient. And it's best to pre-order. I didn't do that, and I waited about 30 minutes. It was by no means a terrible wait, but it's good to know for your first visit. read more

This pizza was so good. The crust is a Roman recipe which results in it being light and crunchy. Then it is topped with fresh ingredients. So far I have tried the Diavola, Burrata (my favorite) and Margherita. It sits outside of Peak of the Vine so order a pizza and head inside for a glass of wine. read more

This small food truck tucked away on the side of the road has some fantastic pizza. You may need to pre-order the pizza because it seems like they run out fairly quickly here. The pizza had such a solid and clear flavor to it. Nothing overbearing and you could distinctly tell exactly what each pizza was trying to do. This is not a pizza that you should expect to have leftovers for, I would not consider myself a heavy eater and I was very easily able to finish the pizza by myself. This pizza food truck is a hidden gem near downtown Apex. I got the Napoli and the Diavola. The sauce on the diavola combined with the spicy honey and salty pepperoni was an incredible combination. The Napoli was also delicious and a unique combination of toppings. The crust was the real star, though - soft and fluffy on the inside while perfectly crispy on the outside. Let me just start with the CRUNCH. Praise the pizza gods, the crunch on this pizza is amazing. You can hold a slice by a corner with two fingers and it will stay perfectly even, no flop at all. And when you bite...THE CRUNCH! Not that it is like a cracker, no just the bottom of the crust is crunchy, you still bite through soft toppings into a welcoming crust before hitting the crunch. I love the Amatriciana with delicious pork guanciale (Pomodoro, Mozzarella, Pork Guanciale, Red Onion, Pecorino Romano, Crushed Red Pepper), my wife is all about the Parma with fresh arugula but aged prosciutto (Pomodoro, Mozzarella, Arugula, Prosciutto di Parma, Pecorino Romano). My daughter can't get enough of the Burrata for a cheesy treat (Pomodoro, Fresh Burrata, EVOO, Fresh Basil). But my son goes classic Margherita every time (Pomodoro, Mozzarella, Pecorino Romano, Fresh Basil). Pizza perfection. Literally the only pizza my wife will eat any more. A complete surprise find tonight and my pizza standards have changed forever! I was scrolling Yelp for an Italian place to hold a company dinner and saw photos of Claudio's pizzas. What? They're from a food truck 15 minutes away? I was determined to try one of these pizzas immediately. And it did not disappoint. At all. It was one of the BEST PIZZAS I've ever had! I am a casual home baker and pizza maker and appreciate good quality ingredients and freshness. Claudio, who is from Rome, explained the type of Italian flour he uses and its high water content, which I believe gives the crust its crispy, crunchiness. I had the Daviolo, with ricotta, mozzarella, pepperoni, basil and spicy honey. The flavors meld perfectly and the sauce is deliciously sweet. The spicy honey is left on your tongue at the end of each bite. I can't wait to try them all. These yummy Roman squares are going to knock the Triangle's pizza scene off its rocker, er, pizza stand. Great spot to get roman style crust pizza with fresh toppings. This food truck has recently started parking on Salem St. near downtown Apex, and it's a short drive from my house. Ordering online is easy, and they seem to always have a rotation of different special pizzas. I particularly enjoy the hot honey one. :-) Pro tip: Order ahead and pick it up at the time it says it will be ready. I've tried to go early and only ended up having to wait for it. We tried this place during dinner time last week. It is take out only since it is a food truck. The pizzas were freshly made with good ingredients, but the cost is a bit high. The dough used was a bit unique, instead of the typical pizza dough, what is used as base tasted and felt like focaccia bread. I am not sure if this is what authentic Italian pizza supposed to taste like, but will verify when I visit Italy this summer. read more
