    Prime Rib Post-Microwave

    We were entertaining friends from out of town on Saturday night and decided to have dinner at Fork & Dagger as we have been to the restaurant numerous times, including hosting a large table for my husband's birthday, and have had relatively positive experiences. Unfortunately, 3 out of the 6 entrees we ordered were (or became) INEDIBLE. Two of the inedible items, Prime Rib and Halibut, were featured specials. The Prime Rib was to be served Medium, but it was UNCOOKED and SO GRIZZLED that it could not be cut with a steak knife. The Halibut was overdone and dried out (risotto was excellent). The NY Strip was ordered Medium, but served Blue. These issues are all easily remedied, which is why I am always confounded if a restaurant chooses not to fix their mistakes and make it the customer's problem as the hill to die on. Given our recent experience, I really don't expect this place to remain in business much longer which probably makes this review moot, but the ownership may want to consider the following: DON'T condescendingly "serversplain" and argue with your customer about Prime Rib temperature. You never know who you are speaking with and they may know more about proper meat temperatures than you (and maybe more than the person who incorrectly prepared it). DO apologize and offer to either remake the item or remove the item entirely from the bill. I prefer the former and so should the restaurant because it shows that the Cook ("Chef" is overzealous) can properly prepare the item which makes me more than willing to give the place another try. DON'T be snarky, rude and unapologetic and remove 1/2 of the price of one of the 3 entrees and call it a day after taking the plate back to the kitchen and MICROWAVING the entire thing as your way of solving the problem. It's a big EFF YOU to your customers and, without customers, well, you know...

    Oh so close! Nearly every 5-star box was checked off. The food: yes. Drinks: yes. Service: yes. Ambience: almost. We ate later on a Friday night on a bit of a whim. Discovered they've been open just a year. It was busy but not packed tight. First impression was your typical Wisconsin bar (but cleaner). We checked with the hostess (you have to walk beyond the bar) and she thought a table would be available in 30 minutes. We found a place at the bar where drink menus were laid out. Don't expect 100 beers to choose from but for a smaller place like this the selection was excellent. I didn't see on the menu where flights were offered but I know they must be as flight boards were hanging behind the bar. Someone did their homework when choosing the beers and our bartender seemed knowledgable (owner?). This wasn't your typical Wisconsin craft beer selection. They offered a very unique selection of various styles from around the U.S. to include ciders, sours and even mead. Quite a few on tap and more in bottles. I'm a beer guy and this list was seriously good. There also must have been a dozen bombers; something you don't see much of outside of a specialty liquor store. They also had a nice selection of wines and specialty house drinks. During our drink/conversation the manager checked on us and told us our table would be ready soon and a few minutes later it was. I didn't put a watch on it but it must of been close to the 30 minutes promised. The main dining room (you can eat in the bar room) was a singular open room with a large counter for the hostess. Lower ceilings and carpeted floor kept the potential noise in an open room to a minimum. There were a few high tables on one end, larger tables in the middle and smaller tables near the windows looking out to the parking lot. The tables and chairs were nicely built and heavy on being natural wood with "iron" furnishings. The decor was pleasant but lacked a singular style and being so open lacked any intimacy (I know, it's a restaurant). Ice water was waiting for us at the table (very nice touch). Utensils were fine. Napkins were "fancy paper". Our server was prompt, friendly, and courteous telling us the specials of the evening. The menu was just what I like: a smaller single page with starters, greens, and main courses clearly defined without being pretentious. It was a bit up-scale without being "high-brow" in terms of choices and the prices were very reasonable. It's not a large selection so the difficulty for us in choosing an entree is a credit to whomever put the menu together. We started with the seared scallops. I thought the amount of sauce was a bit weak and they were slightly undercooked but that's being picky. They were seared nicely and delicious. Of course my wife and I have the same tastes and we were immediately drawn to the dried cherry and goat cheese salad (with Salmon). It was perfect. The generous portion of salmon was hot, the goat cheese slightly melted, the smoked bacon crunchy, the candied walnuts sweet, the greens fresh and with the perfect amount of honey ginger vinaigrette drizzled throughout I can honestly say this was one of the best salads I've ever had. It also came in a choice of sizes which is not very common. I mentioned before that the prices were very reasonable and more-so considering the quality of food. The service was top-notch starting with the bartender, the manager checking on us and the wait staff. We were maybe on the tail-end of service that night but our food was quick to arrive at our table. We will definitely come back. Excellent food, great service, and terrific drink selections. The decor is, of course, a personal opinion. I only felt that this is the one area that maybe fell a little short and was out of place in comparison to the high level of the other characterizations. But please don't let my pompous opinion keep you from enjoying what this establishment has to offer!

    Tonight was our 1st time at this fabulous place! Our lake neighbors dined there last evening and highly recommended it to us, so we went! So glad we did! We started our dining experience with the evening's special appetizer--crostini topped with smoked salmon, a delicious cheese, served with arugula and a bit of cucumber! I ordered the mussels starter as my entree. It was absolutely wonderful and huge! About 24 mussels with toasted crostini. My husband and I shared a blackberry, goat cheese salad(the evening's special)--excellent! My husband ordered the scallops with orecchiette pasta )evening's special--which he said was fabulous! Although we didn't have room for dessert, we stopped at the bar and decided upon an after dinner drink. LOL! I had a "chip shot" which was excellent (Baileys, Tuaca and coffee)! My husband had a Strawberry Baileys Shake--strawberries, ice cream, and Baileys strawberry cream. It was garnished beautifully! We will definitely be back here with family and friends! It was the best meal we had in a long time!

The lemon pizza featured lemon flavor, of course, but it was perfectly balanced with the flavors of the smoked mozzarella, basil, arugula, and EVOO! The Beef Marsala was rich, but not too rich, in flavor with very tender pieces of beef braised in a red wine reduction and accompanied by mushrooms, creme fraiche, basil, mozzarella, and a delicious Marsala demi drizzle The crust on both was perfectly crispy with a slight chew. They call it Roman style pizza, in that the dough is made fresh in-house in the same manner the traditional Roman pizza (think thick, rectangular pizza) dough is made, but as a "pie" shape, you get a light, crunchy edge and crispy thin crust. It was unlike anything I've had in the Milwaukee area. My friend and I also started with glass of Macedonian pinot noir and finished with a traditionally small pour of Vin Chaud, which is similar to mulled wine. Both were fantastic! There are some gems in Elkhart Lake, and Harry's is one of them. I highly recommend you add Harry's to your list when in or near Elkhart Lake. This is the same family that opened Harry's Prohibition Bistro and Harry's Diner in Sheboygan, which I've also enjoyed in recent years!

I knew immediately that this was a place we'd return to again and again. It's just one of those places that feels like you're going back in time to a simpler place. The area around the property is vibrant and alive. Everyone seems happier just being there. Elkhart Lake is such a picturesque little town. Everyone at the resort gets up and takes a morning walk to the shops, the farmer's market, the park, the library, or to get some coffee and breakfast. Part of the charm is you really don't need a car while you're there. Everything is walkable from the resort features themselves to additional dining to a great ice cream spot. The lake is gorgeous and pristine in its beauty. Enjoy time at the beach, the complimentary kayaks, canoes, and paddle boats, or rent a boat in the nearby marina. If you're not a lake person they have a nice pool and, of course, everyone loves a hot tub! Often times there are events in Elkhart Lake on the square around Siebkens or on the property itself. Siebkens is steeped in a rich history of auto racing and is frequented by people in IndyCar and other motorsports including those at the nearby Road America raceway. You can see a lot of pictures and information about racing history at the resort. The food is phenomenal. If you're a grilled cheese connoisseur, and who isn't, then you're going to love Siebkens - but honestly, everything hits. The cheese curds are classic Wisconsin, the baked brie is next-level, and the short rib ragu is the kind of dish you end up thinking about later. Siebkens has a formal dining restaurant in PAM's and a bar with food at the Stop-Inn. PAM's is perfect for a nice, long meal with great food and wine or cocktails. The staff is incredible and really makes it a nice experience. The Stop-Inn is a fantastic bar with darts, pool, and plenty of space to let loose. I've had many a good conversation at that bar. There's always live music on the patio outside the bar and people just having the best time. Bottom line, if your family wants to get away, go to Siebkens. You won't want to leave!

We had a room in the newer portion which we were selfishly happy about. It was super bizarre though, when we got to our room it had to have been like 85+ degrees. It was so hot that we had to keep the sliding door open for like an hour. Even the complimentary water bottles were too warm to consider drinking. Super weird but we were able to fix the issue. During our stay we were able to easily walk to the holiday market down the road. We were excited the resort offered complimentary breakfast, but it was very underwhelming. There was very little space and just yogurt and granola and not enough left for our group to all enjoy, and no staff that we could find to ask for more. All in all the place was clean and we got what we needed out of the stay!
