Am I writing this review way late? Yes…read more But it was too good to ignore. If you only remember one thing about this review it's this: Pineapple Pork Belly Burnt Ends. Yup, that's it. That's my whole review. Just kidding. But seriously, it's so good! The tender pieces of pork belly are slow smoked with pineapple to create one of the most tasty bites of bbq I've ever had. T-Rex BBQ also has a few classics like brisket, pulled pork, and St. Louis ribs. The ribs were my second favorite meat of the day. The brisket was good too but just a tiny bit dry in my opinion. I got the sweet corn cake and baked beans as my sides. They were complimentary to my meal but not overly exciting. We also tried the Dino dip. It was yummy as well, I just wish I had more chips. The team here is very personable. We were one of the first ones there for an early Saturday dinner and had the time to chat with the crew. They even filled up a bowl of water for our dog which was incredibly sweet. Keep an eye on their Facebook page for closure updates! The first time we tried to stop by, they were closed. Can't wait til the next time I can get my hands on those burnt ends!

Best food I've had at a wedding ever! At our venue he set up the main dinner food like a buffet instead of having the truck, which worked wonderfully. We had sausages, brisket, ribs, and a variety of sides. We had a charcuterie table, and two passed appetizers for our cocktail hour and it was beautiful and delicious. We also had late night pulled pork tacos and those were a hit as well. He can make basically anything you would want. I'm so glad we went with blue smoke! The price was very reasonable, nothing like what you would expect for wedding catering, yet they went above and beyond to make it easy for us! We provided our own plates and silverware/napkins but they had everything else. We actually bought metal bbq trays and had deli paper printed with photos of us and everyone thought that was super cute and a unique touch so I loved that we got to choose our own for that. They also helped facilitate serving our cake and desserts from another vendor. They were very accommodating with our venue coordinator as well, and I'm so thankful everything went so smoothly! There was plenty of food for everyone including all our vendors. We also brought ziplock baggies to send food with guests and ourselves so nothing went to waste. The whole planning process was also great because Justin was so responsive and answered so many questions for me in the months leading up to the wedding. Thanks so much Justin and team!

Delicious food, and no need to worry about if what you're eating is vegan!…read moreAs a vegan in Bozeman, having options is relatively new to me, so it's great that this is a delicious option :) Great service and fun conversation while you wait for your food, and it's fun to see what item they have cooking up today! Last time I got the spicy buffalo cauliflower with veggies and quinoa and my fiancee got falafel with veggies and quinoa. Today I got the sausages with (homemade) vegan mozzarella and my fiancee got two sausages. Delicious, and will be returning often!

The three women inside the truck did not wear masks/face shields/gloves or wore them below the nose/mouth. This isn't optional. It's a government mandate for the health and well-being for the public. If you're going to operate a restaurant, follow the rules. It's more than a moral and social obligation, it's the actual law and you are putting lives at risk. I wore a mask to visit your truck because I care about your health and safety. I care about an older family member you may have to care for, or an immunocompromised housemate you share space with. I realized my choices may determine the life or death of someone that is loved and a cherished part of your world. That's what it means to wear a mask or face shield. It means to think beyond yourself and care for those you cannot see and will never meet. It's empathy. I asked you show me the level of care and respect you said "I'll consider it." I will not be back.
