    Best food truck - brick oven pizza with great crust and sauce! So happy to hear they have a new permanent home in Gardner.

It also seems to be a great daytime meeting spot. Kansas City is apparently still a very small town because during one lunch I randomly ran into both a friend from undergrad AND an old coworker I hadn't seen in forever. I ordered the Salmon BLT and really enjoyed it. The salmon was delicious, the brioche was great, and even the chips were good. If I could change one thing, I think a slice of cheese would take the sandwich up another notch. Provolone would be good, but pepper jack might really set it off. Overall, my food was wonderful, I loved the atmosphere, and it's a great choice for lunch when you want something casual but still want to sit somewhere with personality. On the second time of asking, I wanted to see if she danced a different tune just as well. Putting on a Chicken Cobb for size proved ill-fitting, at least stood beside THAT sandwich. Nothing to make me crawl back with a humbling desperation. Inflation makes your lunch $10-15 already, so may as well make it twenty, order the right thing, and the Russell becomes worth frequenting. Just make sure she's wearing her shooting boots - we don't have room to thirst for Cobbs y'all.

Upon doing some research I learned it's a scratch kitchen specializing in clean eats, and that it's a chain. A win for the health options, a ding for the chain, but not all chains are bad, an we are living in a time where there are some winners. So, I packed myself up and headed down the road to Prairie Village. It's still fairly new, and it has that squeaky clean feeling to it when you arrive. Inside it's counter service and you seat yourself (they will bring the food to you). It kind of reminded me of how Noodles and Company felt when they first became a thing way back in the early 2000s. I ordered a thai salad that came in at under 400 calories so I was honestly skeptical at how big or flavorful it would really be when it arrived, and holy cow was it good. The chicken was cold, but still held some flavor, the dressing was great, there were fresh veggies, pickled onions. It was one of the best 400 calorie meals I've had in a long time.
