That's what I love about food trucks. You can go someplace completely different out in the open and have lunch or dinner. They're not all great, but it's always fun to experience new foods and new ways of eating them whether it be a festival a forest preserve, a town Square or even a micro brewery. Food trucks are always a fun quirky option. So having the opportunity to eat a Panini from uncle Cam's was one I've been looking forward to for some time. We all know that food trucks aren't inexpensive but neither is going to get counter service at your local sandwich shop or even fast food restaurants like McDonald's, Taco Bell, etc. So I walked up to the window and I ordered The Cam Panini, which has ham, turkey, cheese, pickles, (which taste like their homemade) onions all the toppings you can imagine, (but FYI, I was torn between The Cam and the Rio Grande something a little more spicy) The Cam didn't disappoint. The Panini sandwich came with chips and slaw plus I ordered a side of bruschetta, but we'll wait on that. It didn't take long to get my order. It was hot, crunchy and delicious! The bread was perfectly done, crunchy on the outside had that perfect chew to it that rustic panini breads should have. When you bite into it, all the ingredients on the sandwich blend together so perfectly. Sounds kind of funny but all those tastes plus that crunchy, warm bread are over the top delicious. Now for the bruschetta... Oh my goodness! So much topped on to the bread that it was falling off. It had the great balsamic flavor on top with all the chopped tomatoes, garlic, seasonings. It's everything you would expect from bruschetta, but that fresh flavor was so good. I think there were six or eight pieces in the order and it was filling and much better than some bruschetta I've had at restaurants. Everything paired well with my Kolsch beer at CLB and I didn't feel ultra full. I can't wait till they get back there so I can try the Rio Grande because it sounded way too good too. There's other sandwiches on the menu but for myself, those were the two is opting for that night. Oh and my reason for 4 stars is I wish there was just a bit more meat on the sandwich but that's not going to keep me away.
