This place was established by three Japanese chefs who got sick of the Byron rubbish and decided to unite and open up a good eatery up in Federal a couple of years ago and their reputation has grown in leaps and bounds.
They offer the usual sushi rolls, seared fish and tempura stuff plus burgers with a small Asian twist. While I didn't order the burger, I have heard they're amazing and the couple I saw being carried out of the kitchen looked epic!
I decided on the lightly seared salmon sashimi served on a salad ($17.90) and a latte. The latte wasn't superb, a little too bitter, but perfectly drinkable compared to most of the slop you get in Byron.
I actually gasped when I got the dish. There was salmon! Not two or three tiny strips of it but a plate full! There was about 10 nice slices as big as a normal thenar and thumb and the salad was fabulous. The salmon was exquisitely seared, just a couple of millimeters of light pink and the inside raw yet soft and not chewy. See the picture I took to understand.
My mothers ordered two rolls each ($6.90ish each). One salmon and one haloumi then the other got tempura pumpkin/vegetable and haloumi. I had a bite of the haloumi and I still can't work out what the sauce was - I think mirrin - which just totally worked.
As a side note, the menu states explicitly that they use brown rice for all the rolls and no sugar is used which is a big plus for me because I cannot eat much sugar (eczema) and they try to use as much local produce as is possible.
The food is slightly expensive for such an isolated place but that's Federal for you. I would and will be going back for more - this time I want to try the burger. If it's as good as the Japanese cuisine, I'll up the rating to a 5/5. As it is, I give a 4.5. read more
