The chipilone hotdog is unique in my experience - they crisped up the cheese on top, maybe under a broiler? Anyway, everyone loved it. The fries were great and sprinkled with tajine spice, as were the grilled chiles that came with the dog. I had the Chile relleno burro, and it also was unique in my experience - lots of veggies, including a fair amount of cabbage (see photo). Loved it!! The service was so friendly - they asked us if we wanted an additional Chile to go with the hotdogs and of course we said "yes!" Despite it being outdoors, the views of the mountains are great, and your nestled between some beautiful historical buildings in the community of Vail. Service is completely out of this world. I went once with my sister-in-law and the employees recognized us on our second trip. They greeted us and said they were glad to see us again. Their food is so good that I decided to have them cater my daughter's graduation party recently. They showed up with a giant truck that was parked outside my house. My guests were able to go up to the window and order what they wanted from a predetermined menu. They were greeted by the same amazingly friendly employees. The tacos and Sonora dogs were of the same fantastic quality as they were on my previous trips. They set up a salsa bar outside the truck so we could dress our tacos. It was so much easier than cooking or ordering food and running back and forth to get it. And my guests were well fed and happy! And let's face it, it looked pretty cool having the truck outside the house. Whether it's grabbing a quick bite for breakfast, lunch or dinner or hiring them to cater an event, you cannot go wrong with Giro Taco Truck.

Sam Fox of Fox Concept Restaurants (Wildflower, Blanco, Zinburger, Culinary Drop Out) told Ken Foy of Dante's Fire upon opening his Culinary Drop Out directly across the street that "I'm going to put you out of business so fast..." Not too kind nor professional of words to a fellow chef. Well, Dante's Fire is still open and going strong. So Chef Foy decides to do a food truck. So in a slap in the face to "Culinary Dropout," he names it "Culinary Graduate." I think that's funny. Lost some respect for Sam Fox. So, you look at this food truck's menu and you salivate at every item. The worst part of this truck is having to decide what you are going to order. Part of the problem is that the menu items are $10 a pop or more. Not cheap. I decided to go baseline and tried the Sexy Grilled Cheese. Delicious combination of flavors. My only disappointment was the way the bread was grilled. Uneven. Still had plenty of ungrilled white real estate. Not grilled to perfection as my former favorite food truck, Burgerrito (since moved to Tennesee), could do. That will be my bar of standard for grilled sandwiches forever. The garlic fries were good and I enjoyed them. I was disappointed that he was out of the tomato herb potato chips. I can't remember his name, but I sure enjoyed service from the employee. He was super friendly, passionate about the truck, and energetic. Follow them on Facebook for days of service and location. 5* = A top favorite. Mind-blowing good. I will definitely return and I will go out of my way to go here. Worth every dime of my money. 4* = Outstanding. Tucson-top-tier. Some elements not quite as good as it gets, but it still is worthy of my regular business. 3* = Good experience. I might do repeat business if it is convenient, the only option, the only one in its category, or on a whim, but would not be among the first thing to come to mind. Would definitely recommend you trying it to get your own take on it. 2* = Not so good. Would not recommend at all. Waste of money. 1* = How are they still in business? Stay away at all costs!

I can't imagine surviving that hot box in Tucson heat (looks like no AC inside). The folks are incredibly nice and I learn that this is a venture of newly minted Tucson Iron Chef 2022 Ken Foy, who operates the acclaimed Dante's Fire restaurant. Now I get where the inspiration for the eclectic Sammie's came from. I still love the Dirty Pablo - just don't mistakenly call it a "Dirty Sanchez". Go look it up!

We had a good view of the outside door facing the vehicle line (pretty sure it was the bathroom) and there was brown liquid seeping out from underneath the door onto the concrete sidewalk. It was not something that made you hungry for sure. An awful site. I would move that door or close it off. A dumb place for it. Other than that, it was fixed the next time we went. We have NEVER gotten sick here at Fito's Taco Shop. That's how I judge these places and will return until the day I do. Employees wash their hands well and keep clean kitchen area. On the other hand, their competitors (other Mexican mobile food vehicles ie: (roach coaches) parked between the tracks in the past) we did get sick. WE GOT REAL SICK, (like a virus sickness, horrible week of fever) the first time we went, and then stopped going to those mobile food vendors FOREVER after that. At Fito's Taco shop, their burritos have always been massive and delicious. If you take them apart, the tortillas are about 20 inch diameter or larger. Short wait times in their drive thru is what I like. Friendly people at the window that I have always tipped. So, 5 stars minus one star for that day something backed up but that wasn't really their fault was it? And, they apparantly called it in right? They get all 5 stars. Tip them well folks.

They're currently working to get set hours, so check their Facebook for today's schedule. It's an interesting format with a new themed menu each day. Monday is American, Tuesday Asian, Wednesday New Mexican, Thursday Southern and Friday Italian. Each day they have 3-4 options on the menu. I had the Southern today and chose the Cajun shrimp with eggplant, small shrimp with breaded eggplant slices and 'Cajun' cream sauce. For 8 dollars it was a bit small, so I wound up taking it home and put it over rice for a more complete meal. Both the other menu options (fried chicken and steak fingers) came with mashed potatoes and corn, so I'm not quite sure why this wasn't a larger portion or came with a side. (Edit: I just posted on their Facebook about adding a side and they immediately responded saying they'll be adding something from now on! Gotta love local business!) Taste-wise was pretty good, but not mind blowing. It was Cajun inspired at best, I love spice and was looking for a lot more than it had. Three stars for the food, with an extra one thrown in while they work out their opening kinks and for their great community interaction. Rita Ranch needs all the food options it can get. Plus, the kids eating while I was there seemed to love their fried chicken and potatoes. I'm looking forward to coming on a Wednesday for their New Mexican options.
