On Saturdays they have a "live hoof" gathering in the parking lot. People bring in sheep, goats, cattle, etc and then the customers pick out which animal they want to buy/slaughter. They start this at 5AM, but I was told the line starts before 4AM because that they get the first pick of the animals for sale. Place was decorated with previous animals. Not only do they have a fantastic selection of butchered meats, they also have plenty of smoked meat options, deli items, fresh eggs, butter, seasonings, pet treats, and local honey and produce. Their bacon and smoked pork chops, are amazing and are smoked in house. You can see the smoker going in the parking lot and know it might be a day to get smoked rib rack. The staff is so helpful and ready to cut anything the way you request or answer your questions. The facility is clean and smells of hickory. Always have a pound or two of bacon in the freezer and only go to this butcher for my meat and poultry needs. Please note, they only have land items, no fish or seafood.

She was so delightful, and I couldn't help but laugh when we both got excited about my sandwich choice. These folks really know their stuff. They treat their animals with care and expertise, and it shows. Having been to many fine dining spots, I can honestly say the quality of meat here at The Upper Cut KC surpasses them all. I thought the brisket sandwich was fairly tasty, but it wasn't huge, the onions weren't carmelized they were grilled, and the brisket wasn't smokey. The Mac and cheese was fine and good but not great. If I lived closer and I could get the above with a soda for $20-23, I would give it 4 stars. There's nothing amazing about it to earn 5 stars even if it were priced like I wish. The place wasn't that busy, but with one register running, 4 people in line, and ringing up 2 butcher orders that came in after I was there, it took me about 12 minutes to place the order and another 20 to have my sandwich and side.

I do not eat a great deal of meat but when I do... I want quality. I was ill prepared for the wonderful experience that awaited me. The person that helped me, Brian, was terrific. He was super knowledgeable about products, preparation and taste. He even steered me away from higher priced items for lower priced things he thought I would like better. He was thorough and patient with my endless questions. He is very well suited to his job. They have all sorts of items in this quaint shop. They have cheese, jams, jellies, bread, eggs, kitchen equipment. From outside the shop, it does not appear to be very large inside and it isn't necessarily large.. just well packaged. The meat selection is vast... beef, pork, buffalo, chicken, lamb.... in every configuration you can imagine. They have steaks, ground meat, jerky. I learned so much just talking to Brian. There is ample parking and this store is located in a strip mall so there is easy access. Everything is sparkling clean and has a very nice atmosphere about the shop. Tremendously impressed with this gem of a shop.

I can confidently say that Paradise has been the worst butcher I've ever used. Is the product I received good? No. Did I receive everything I paid for? No. I've been buying through this specific farmer friend for about two years now. He decided to try out Paradise because they are closer to him, as opposed to driving several hours to the butcher we had used before. Well, this is where the nightmare began. He picked up the beef and delivered it to my house on a Saturday morning. He and I unloaded the truck while my wife loaded the freezer. Before he left, he told me to take the receipt and double-check that we weren't missing anything. The receipt ended up in one of the boxes used for delivery, so I didn't check it right away. We didn't look for it until Monday and by that time our farmer had already left for vacation. Once he got back, he sent me a picture of the receipt, and we went through our beef. To our dismay, we discovered that we were missing all 24 steaks and one roast. As soon as I realized this, I let my friend know, and he immediately notified Paradise. That's when the headache began. They told him to have us count again, make a list of everything we are missing, and contact them with the list. My wife called them, as they had asked, and their response was, "Well, we don't have it, so your farmer must have taken it." My wife was pretty shocked at this point because we had done everything they asked, yet their immediate response was to dismiss the situation and basically accuse our farmer of stealing the steaks. I contacted my friend and he called the manager to let them know we were less than impressed with the customer service at this point. They apologized and said they would help resolve the issue. Well, that turned out to be a lie, as they never returned a call to my friend until he threatened to get his lawyer involved. By this point, we had cooked our first batch of ground beef and it was a disappointment. In 11 years of buying beef, I've never received such low-quality hamburger before. Normally the hamburger I've received has been 90/10, maybe 85/15. This junk is 70/30 at best! We cooked 4 lbs of beef and drained over a pound of fat. It was so bad that we had to drain it twice because it wouldn't cook properly-it was literally being boiled in the fat. My other concern is that if they added an extra 15% of fat to the hamburger, shouldn't I have more packages of beef than usual? I can tell you I have no more than I've ever had when buying from other places. Well, they finally called my friend back, and he informed them that not only was I missing meat, but the quality was also sub-par. He told them they needed to figure out how to reimburse me for both the missing items and the poor quality ground beef. The manager said, "give me until Monday and I will call you back." Once again, that turned out to be a lie, as we haven't been able to reach them on the phone again. I was never asking for all my money back, or for them to substitute for the missing product; I just wanted a refund for the items I never received and a portion for the terrible hamburger. My recommendation to others at this point is to look somewhere else for a butcher, as Paradise's customer service is terrible. You might never hear back from them, the meat quality is poor, and you might not even receive your full order! My question is: Where did my missing steaks go, where is the extra hamburger, and for goodness sake, where's your phone?
