I chose a latte with their panela syrup. Panela is an unrefined cane sugar, similar to brown sugar but with caramel notes as well. With the temperature drop on Sunday, it was the perfect comfort flavor, and I'd easily drink it throughout the cold months and then still come back for it in an iced coffee. The staff were very friendly and welcoming; the barista who took my order also gave me helpful tips on the different beans that came in my chosen bundle. The space is small and can get easily crowded, so if you're looking for a work spot it would be good to come secure a place early.

They offer flights, hand made syrups, and plenty of milk and sweetener options. Even their batch brew is Chemex and never actually batch. Periodically, they have special releases, like mead barrel aged coffee or specialty micro lots and innovative processing styles. It's the only shop I know which carries cascara (tea made from coffee cherries). They have excellent baked food from Mr Meowski's, if that's your jam. All coffee is light roasted. There are no exceptions.

They mostly do wholesale business right now, with hopes to expand and serve coffee in a cafe to the public. The only place I know of right now that sells it to consumers is Crave Coffee House on SLU's medical campus. Two, their mission is also awesome. If making great coffee wasn't enough... They want to bring growth to North City's economy and provide jobs for folks who live there. Look out for them, they're doing awesome stuff!

I was able to stand in while some local business owners were testing some roasts with a method called, cupping. Collin was explaining the process and showing us the ropes. He has traveled near and far learning about coffee and has some amazing insight into coffee and roasting with excellence. Stop by to check out their facility! They're appointment only, so make sure to set something up. You can also observe local folks while they're in the roasting process.
