My husband is making his way through the classic menu and has had the old fashioned, gin fizz, and whiskey sour. These drinks are nothing fancy, but made very well. I've had the more unique selection of drinks including the Drew berries, tropical haa, and mojito. The mojito is minty, flavorful and done just right. The tropical haa is my favorite thus far. It's a strong fruity drink and makes me feel like I'm on vacation. When I was about halfway finished with it, I started to wonder how many shot were in the drink. It has lychee and cucumber, and is perfect for a hot summer day. The Drew berries is delicious, but a bit too sweet for my taste buds. The service is nice here as well. While sitting inside for a drink, we decided to have another, but we wanted to go outside because it was such a nice day. After being out for a bit, I began to get attacked by mosquitos, and decided then decided to move back inside. The waitress was courteous and didn't seem to mind us moving around a bit. Tai Lung Fung has a small food menu if you want a bite to eat while enjoying your beverage. This is a casual, chill bar and a great place when you're in the mood for a drink done right.

Context setting: I'm Chinese American from the San Francisco Bay Area, where we have no shortage of craft cocktail bars with expansive high end liquor selections and innovative mixology. All that to say, I know a good cocktail. Scene: Came in on New Year's Eve. Was sat at a table away from the bar with my sister and two friends from mainland China. Only entirely-Asian group in the bar. Service: We were sat at one of the tables near the bookshelves. Service is polite but stiff. Might be a language barrier with the servers, since my sister and I are primarily English speaking, with terrible Mandarin and 0 Cantonese. Vibe: The couples at the bar (predominantly white guys...) got much more attentive service and conversation than our group. White guy bartender kept giving us weird looks the entire night. We did get the complimentary champagne cocktail when the clock struck midnight, which was nice. Drinks: Thoughtful and well balanced. Honors the flavors of the primary liquors while adding other subtle twists with nods to Japanese and Chinese flavor profiles and ingredients. 5/5, everything we tried was tasty and well executed.

It is a little hard to find, as it is inside of an old building in Wan Chai, but once you find the entrance to the bar and open the door, you will be surprised to find a small bar that is very much like the classic cocktail and whisky bars in Tokyo's Ginza district. Much like the bars in Tokyo, the service here is authentically Japanese. The Japanese head bartender was very knowledgeable and friendly. We each had two cocktails and I enjoyed both of my fruit cocktails. This bar also has a nice garden out on the deck. We didn't go out there because it was raining pretty hard when we went, but we would love to go out there the next time we visit the city.

This speakeasy concept leads to a dim, intimate, narrow bar where the theme is clarified drink cocktails. Hence, the main cocktail list is on a clear "invisible" sheet. There are food items available from next door, The Envoy, but there is also a themed "This is not a Food Menu" cocktail list. Entry is controlled for capacity by a receptionist next door. Service is quietly gracious. Putting the drinks together seems a bit anticlimactic considering so much appears to be pre-batched. It is worthwhile coming once to experience but I have a long list of bars to try before I'd find time to return.

    It's difficult to find the entrance to Room 309. You'll need to enter in the Pottinger Hotel, take…read morethe elevator up to the 3rd floor and then go to the Envoy bar to check in for Room 309. Since the speakeasy entrance is designed to look like a hotel room, they will give you a hotel key card for Room 309 when you are ready to go in. Take the card around the corner and use it to open the hotel room door and go in. Once you enter, your bar seats are already setup and waiting for you with coasters, water, a plate of olives and the bar menu. We went on a Sunday night and there was basically no wait. The bar is dark and intimate. There are about 11 bar seats. There is chill American music playing in the background that fits the prohibition theme. The bartenders are very skilled and knowledgeable. They will explain the theory behind the drinks and their methods are very professional. As of this writing in 2024, drinks are on average HK$150 each. Gone Gimlet - Gin based and very spirit forward. There is cream listed in the ingredients but it doesn't appear to be in the drink but rather the cream cheese cracker with lime garnish on the side. If you're into rum and non-sweet drinks you will enjoy this one. Where's My Whiskey Sour - Bourbon based. Light and refreshing peach flavor that is sweet but not overly sweet. Not spirit forward. Blood and Sand - Whiskey based. You can get this with your choice of various whiskeys that will affect the price. The flavor of Carpano vermouth is very prominent.
