A seminal experience. Good beer on a beautiful sunny day in rock Springs. My server was exceptional, Naomi kind and knowledgeable and clearly takes pride in her work. The steak Frites were exceptional, delicious cut of steak with Demi glace, green onions, and blue cheese. Perfectly prepared and the best steak I've had in a long time. After over a year of monthly Sunday brunch visits to Eves we will not be coming back. We saw a Facebook post to reserve a table online for their special New Years menu, so we did. There was only a 7pm and 8:30pm slot open so we selected the 7pm. We showed up at 10 til and we were told she saw our name down for 7 but that the tables were pre arranged and the couple before hadn't left ours yet. She said let me see if I can find you guys a table and walked away. Moments later she walked out of the kitchen with food in hand and was serving a table as we stood at the podium waiting to be seated. Another young girl came up and said to wait about 5-10 minutes. We sat on the bench and waited 15 before I asked for a manager after watching 6 parties walk in after us and be seated. The manager explained that the reservation list was made and somehow ours didn't get on there even though we had confirmation. He said they'd move a table to accommodate us but then we waited way too long as they started to move a table to a very undesired location. There's a reason a table wasn't already in that spot right in front of the swinging kitchen doors. At that point it felt too forced and like we were unwelcome. We were here in Wyoming for two weeks and decided to treat ourselves to a nice dinner on our last night here. Made it up to eves The menu looked great unfortunately they haven't updated it so when we ordered the sirloin, it was cooked OK but on a complete bed of mush beets, which I absolutely hate I never would've ordered something with beets Under it. Grass is greener where you water it--apparently true here in Rock Springs. Grateful for places like this that conveys a Chef's willingness to flex for the palette anywhere. We've brunched and dined a few times for special occasions known as "live your best life" because the journey can be full of twists and turns. The first time we brunched here during winter I was impressed to see one of my fave shakshuka on the menu while the beau had his fave fried chicken. Space itself is modern, bright and airy for panoramic golf course and pond views with live music enjoyment on occasion. We've been back recently in the spring for dinner and brunch luckily on the patio on brighter days. Kitchen has usually been generous with carb portions which the beau loves fanatically. Liz has been our indoor/outdoor server and we'll be happy to be seated with her again any time. Rock Springs is lucky to have this place. Great menu with options to suit anyone. The pea salad was probably one of the best salads I have ever eaten! It had fresh herbs in it in addition to the greens and peas of course. The pasta dish I ordered was making its debut that night. It had all great ingredients in it: patty pan squash, morel mushrooms and cheese but the squash was salty and the too much oil in the dish. Hopefully they tweaked it a bit because that would make it spectacular. The ribeye was just okay- large portion but flavor was lacking. Garlic mashed served with the steak were great. read more

I loved every bit! The interior is MCM (Mid Century Modern) with a beautiful view (I hate golf but the view blended so well with the natural surroundings you forgot you were on a course). Wearing business casual is already dressed to kill in this relaxed fine dining restaurant. There is an open kitchen you can even see from parking outside through large plate glass windows as you walk in. The seasonal menu indicates the many locally sourced ingredients. I love carrots and the sweetness of the roasted heirloom carrots playing off the feta cheese with walnuts adding contrasting texture in a $6 (as of Oct 2021) appetizer is a steal for someone visiting from a high cost area. The Greek themed lamb main dish has fantastic dolmas and a warm, filling chickpea puree. The lamb is tender but is at least medium well instead of medium rare as recommended and ordered. The wine list is small but you can see the care taken to put together interesting choices from California, Europe and Argentina. I don't know anything about whisky or bourbon but there are many to choose from. A surprising find for an enjoyable meal at prices much lower than what I am accustomed to where I live. read more

We stopped here passing through Rock Springs. There weren't many restaurants open on Sunday and although Eve's is a bit off the path, we noticed the positive reviews and wanted to try it. We ordered a burger and grilled cheese to-go thinking it would be a quick and simple order. It took almost an hour of waiting and once the food was ready everything was cold. This was definitely a frustrating and underwhelming experience. I wouldn't recommend this restaurant from a to-go service perspective. We had no choice unfortunately given that we were traveling with a dog and a baby. The property is not pet friendly and there is no changing table in the restroom. read more

Excellent!!! I had the 18 ounce ribeye! It was amazing! The service was prompt and friendly. After being around angry people from Wyoming all day, this sure was a respite and a relief. My only regret was that I ate it all and then dessert. I was sooooo bloated after dinner that I didn't eat much the next day. Not even my breakfast buffet at my hotel... ha. The steak was cooked right at medium rare. I've been to steak houses in the west here. Mostly Idaho, Utah, California and Arizona. Many of them claim to have a good steak but most do not. I made reservations for Mother's Day. We were seated in the back on a fold out table (like we were camping) away from other guests. The wait staff was inattentive. Eve's is an amazing place. My husband and I were traveling through Rock Springs on our way back to Denver and were looking for a place for dinner, when we found Eve's on Yelp. The reviews are what made us want to try this place. We were expecting "very good," and were extremely pleased to find it to be truly "excellent." The atmosphere is understated and the dress code is super casual (sleeveless t-shirts and jeans shorts were not uncommon). The service is great. Vanessa was our server and she was as pleasant and courteous as you would expect. The food was simply amazing. We ordered the shrimp and scallop cakes and arancini for appetizers; both were cooked perfectly and had wonderful flavor. We ordered scallops and a ribeye steak for our main course. We were not disappointed - in fact, we were truly "wowed" by ours meals. The presentation was over the top - see picture of the scallop dish. The quality of the food was top notch, the flavor was amazing, and the portions were not skimpy. Overall, our experience was incredible. I even remarked that it would be worth a trip back, just to visit this wonderful establishment. My only criticism would be the length of time it took to get our appetizers and meals and my hunch is that it was taking longer in the kitchen - and not due to the servers. To me, the quality of our dining experience negated the long wait for our food. I would be willing to wait again, if that is what it takes to get food and service of this caliber. Came here with my husband and in-laws for brunch and it was absolutely delicious. 3 of us ordered the Egg Toast (I believe it was called) and it's definitely something you don't get back in California. My mother-in-law and I ordered a Peach Mimosa. She didn't taste the peach so they made new ones for us as well as brought us extra peach puree. I rarely drink (1-2 times a year) and this made me buzzed. My husband ordered a burger and he said it tastes different from what he usually eats. Not bad at all. He enjoyed it thoroughly - even didn't share any with me even though we got dishes to share/try out. Will definitely come back to eat here every time we are in town. Staff was absolutely friendly. How are there not more reviews for Eve's? They're excellent. The menu is largely seasonal, so it changes regularly. Trying something new shouldn't scare you, though, as they consistently serve the most exciting, innovative, and delicious food in Sweetwater County. I'm a particular fan of their pasta, seafood, salads, and desserts...but honestly, everything is great. This place is amazing. So far I have tried the trout, which is to die for, as well as this week's pasta. The menu changes slightly each week, which is exciting and an excuse to go back again and again. Homemade fresh pasta is as good as it gets. Very good cocktails, and desserts are amazing... handmade ice cream, cookies, etc. If you order coffee with dessert or at any time it comes in your own French press, so you know it's fresh. My friends were very happy with their pork chops and steaks as well, so there really is something for everyone. The inside is comfortable, and beautifully decorated. Bright, with big windows so you get a great view of the golf course and the mountains. Sparkling clean bathroom, plenty of parking. I'm glad we had a reservation both times I've been. I normally go to the restaurant and when our children came in from colorado thought we would treat them to breakfast at what I thought was the better place in Rock Springs. We arrived at 11:00 and ordered our meals for 10 people. I assumed we would get the very good service we normally do ...there were not many people when we arrived. However, we were not served for another hour and a half. I asked the server when we would get served and our order started coming but there were two orders which still didn't come...we had to tell the server (who was new and being followed around and trained) the order was partially delivered to our table. By that time one of the orders were cancelled. We were a large party so I guess if you all sit at one table you are served last? There was a man who came to our table who said he understood we were "in a hurry" (ha ha ha)! My advice...if you come as a large party don't sit at one table.... Additionally, the menu states for large parties the gratuity is automatically added...thanks to my daughter, I removed an additional tip because I didn't notice that on the menu but the tip is still on the bill...Just some hints...don't go if you a large party and don't have 3 hours to wait...figured we wouldn't have gotten our food had I not have said something. read more

I was skeptical of the menu since nearly everything included cheese in some fashion except for sure the the trout. The trout is really good. Two nice halves expertly de-boned. Cooked to medium probably to get the skin just right. May have preferred med-rare and even slightly crisper skin but that is a stylistic difference and not a technique critique. Scallions and tomatoes could be more Al dente, yet the flavor of both actuates the trout nicely. Zacagnini (red) works well with the meal. And staff is 'down home' comfort. Wine choices are interesting in a good way. Piped in background music is eclectic and subtle. Way more description for the only 'dining' restaurant in town. read more

My company gave me a retirement dinner banquet. I chose Eve's because I heard from friends how good it was. I was not disappointed. This is not the usual banquet food. The staff was very busy on Valentine's day weekend Saturday night but promptly brought our drink orders. Appetizers salads and entrees were fresh and delicious. Eve and Josh have set the bar high for restaurants in Sweetwater County. Most other places in town are mediocre at best. We have eaten here over a dozen times for dinner, brunch, pizza, burgers, charity nights, to-go, brought my parents, visitors, kids - always delicious. My parents are world travelers, retired military officer, and serious foodies, and when they visit us, they just gush over Eve's. The menu gets updated frequently and I usually go for the fish of the moment whereas my husband loves the steak frites and wedge salad. Has a comfortable bistro-like feel and an amazing location with patio when the weather is good. They have a mezze plate app and roasted carrots w goat cheese and walnuts and microgreens that I love. There is always some kind of handmade pasta. I love Eve's creativity and 9/10 her new menu items are fantastic. We boycotted for a while after the hubs spotted someone wearing flip flops in the kitchen, but ultimately it is the best place in the area and we just had to go back. I do wish they offered some craft mocktails. Brunch is extremely affordable about $10-15 pp and dinner entrees start at the steak frites steal of only $22 up to the giant 18 oz ribeye at $38. I have heard locals complain about the prices, but they seem fair and accurate to me for what you get. All our out of town guests feel it is cheap compared to where they live.
