I have never had a cut like that from the supermarket before. The butcher slices the meat underneath the bone, almost separating the meat entirely from the bone. It cooks better this way. He then ties it up. He goes out of his way to get me the best piece he has, and he even offers to season the meat for me, which I decline on...but still, who offers to do that today! Furthermore, their prices are excellent! They sell club steaks for $5.50/lb. In Shoprite, I can't find steak, other than chuck, for even close to $5.50, and let me tell you, the club steak from Butcher Boys is absolutely delicious! I've grilled it, and I've sautéed it on the stove...it's a really nice cut. Finally, they make top quality Italian sausages! Save the trip to Arthur Ave. This is at least as good, hands down. I highly recommend Butcher Boys over ANY supermarket for meat, pork or poultry.
