The Panther Burrito has become my go to as it's packed with steak, chicken, shrimp, chorizo, rice, and smothered in cheese. The new Birria items were interesting and the Mrs ordered up The Quesabirra which she said were pretty good but she liked other places versions better. The Margaritas always hit the spot too, we had the lime, a raspberry and our friend had a strawberry version. Service was fast and friendly, the place had gotten a mild face-lift since we'd been in last and it looks quite nice!

I started with a banana daiquiri - not your typical drink at a Mexican joint but it was $3 cheaper than their margaritas... it was quite tasty. I then ordered their two enchiladas combo (one cheese & one ground beef) which was good but nothing special - actually their red sauce was not my favorite. My wife got a platter with an enchilada, a burrito and a tostada - she described it as solid. Prices were typical. I would not rush back.

We visited around 7:45 on a Friday evening in August and found it remarkably not crowded, but they have another location in Cedar Falls that probably draws a larger crowd. We were at the Waterloo location, which probably caters to a lot of business people and business travelers during the week. We ordered a lot of food for two people, and it was all excellent, but I rate this cool place four stars because all the food came out of the kitchen at once and we were totally overwhelmed. If it had been paced, I think we could have pulled it off, and as travelers, we couldn't really take leftovers with us to have another day. Our server was extremely helpful and patient helping me understand their beverage selections. I enjoy a good cocktail or a glass of good wine, but my beer tastes are even more limited, but SingleSpeed offered up the perfect solution: the SingleSpeed-a-rita. This is made with their Ring Around the Gose, tequila, agave, and lime juice. That hit the spot on a hot Friday night in Iowa!
