While I was waiting for that, I saw that they have chicharrones tacos, which most places do not offer, so I got one of those too. Service was fast and pleasant. They gave me a bag for chips even though mine was a take out order. Good chips, not store bought. The chicharrones was soupy, so they put it in a small take-home box. I got back to my car and ate it by scooping it up with my chips and ignored the corn tortillas underneath. Very tasty. The pastor was also good, different from other taquerias. Plenty of onions and cilantro included on both. Good selection of salsas, though you need to ask at the counter for lids for the plastic containers. I'll definitely be going back, especially since I saw tripas on the meats list. Gotta try all the meats!

It is a sheet-style, there is no soup-ey red sauce, and it is perfectly crispy with amazing cheese. It is also visually stunning with a sour cream sauce drizzle. I used to live in Salinas and take advantage of the fact that these were available to me whenever. Now that I live more than one hundred miles away, I wish I could get the recipe and make it myself.
