I found Paul on yelp and he responded very quickly on a weekend in the evening. He has a mobile business during the day and sharpens knives and scissors from his home after he returns. I dropped my knives on his porch and picked them up after my son went to bed in the evening. He was flexible and communicative. I dropped of 7 knives and my kitchen scissors and it was less than $40 for the whole lot. My knives are better than when they were new and I am blown away. He is so reasonable and did a great job. My knives were a disaster...Until I met Paul at Edgeware. They went from being as dull as a letter-opener to razor sharp. No joke, you could shave with them. The thing is I don't cook much, so I have never invested in any really high-end knives, but even the low-cost Target brand knives that I own are now sharper than when they were first purchased. I've attached a picture. The knives are still dirty in the picture from the sharpening, but if you look closely, you can see just how uniform and precise the edge of each blade is after Paul sharpened them. When I cook with them, they slice through anything with zero effort. It's such a significant improvement. I am entirely impressed. Pricing was fantastic. I expected it to be much more expensive. Paul was an easy going approachable guy. I called and left a voicemail and he called me back almost instantly to see how he could help me. Because I wanted pocket knives sharpened he said he could be available after 5pm; basically any day that worked for me. I made an initial appointment but ended up having to cancel but it wasn't an issue. He just rescheduled on a moments notice. When it came down to sharpening the knives, he definitely is an expert and sharpened three of my knives in minutes.
