I took some notes and this is what I thought of the dishes. Xoajacan Imoladas - The mole is perfection. The flautas, superb. Everything in this plate is a symphony of what I would expect from Xoajaca. 9.5/10 Barbacoa Bonemarrow - Barcacoa is on point. The Marrow is Sublime. Together with the accompaniments is superb. The microgreens, the sauce and the square Tostada works well all together. 8.8/10 Salmon - Cooked perfectly. The corn is a great accompaniment. The fish is impeccably seasoned.
