First let's talk about those beans. 1. The beans are thick which I like. 2. I think they must use hoisin in them. To me they have an Asian flavor. I was hoping for something smokier and not so sweet. 3. There are nice chunks of meat in the beans. 4. They are missing something. Maybe some kick to go with the sweet and tang. Or maybe a bell pepper to add some complexity. Definitely need to cut down on whatever is making them taste so weirdly sweet. Let's get into the ribs. Let me say first that I prefer beef over pork. I didn't realize they were pork or packed in styrofoam until I got home. They were kinda cold. The ribs were tender and not overly sauced. There was not much fat. The sauce is sweet and rather thin. They do not have pickles. Maybe a pickle would have made it better for me. Overall I found everything overly sweet. I would have liked something salty (did someone say pickle?) My boyfriend liked the ribs and thought the beans were pretty good. For me, it was all meh. Since I'm the hunter and gatherer in our little family, I doubt we will be back.

Brisket was unwrapped near our table and was dripping juices - spice rub and doneness was right on. The meat was so tender and flavorful that I didn't really need P&F's BBQ Sauce- which was also very good and a bit different from traditional KC style sauce. Pork Burnt ends aren't my favorite but these were tasty, very well spiced and were complimented well by the P&F sauce. While I thought the brisket was the star of the show, the smoked and fried chicken wings were a close second to the brisket and seemed very popular with the crowd at Discourse. When chicken is smoked well, it carries the smoky taste throughout tender and juicy meat and these were smoked well. Can't forget Discourse Brewing, I tried their Used 8 track Dortmunder Lager. I like German style lagers and pilsners and this choice well complimented P&Fs BBQ. Before finishing for the evening I had a Platinum Label "I'm a Dinosaur" Helles - it was light and not too hoppy. I'd have both again. Wednesday is Trivia Night at Discourse and while I didn't stay for it, the place was packed an hour before trivia started. All in all a great evening. If you like BBQ, Beer or trivia or want to hit a trifecta - try Discourse Brewing on a Wednesday night!

I ordered the brisket combo with a quarter chicken leg, cheesy corn, and baked potato casserole. My partner went with the brisket sandwich. We grabbed it to go in a hurry... and forgot plastic utensils. Crisis? Maybe. Regret? None. The brisket was perfection -- tender, beautifully smoked, with bark that had just the right texture. The chicken was outstanding too: lightly sauced, deeply flavored, juicy all the way through. Every bite tasted intentional. The nachos were perfect for sharing and disappeared quickly. The kids loved the mac and cheese and cornbread, while the guys couldn't get enough of the burnt ends. In general, I think BBQ is often freshest during lunch hours, but we still had a fantastic reunion dinner. I saw many tables being taken care of by waiters, and even the store manager coming out and doing his part for those sitting at tables near ours. Our table, for some reason, was being covered by the bartender. He did stop by... but had a weird vibe of trying to be our buddy. He did not act or look like staff. But he did take the order and deliver the food. I think we are going to go with 3 stars. Ambiance - Well, the design is nice enough. There is no personality, and the building could be utilized for any kind of eatery with little to no changes. Normally, that would get a standard 3-star... dropping it to a 2-star in this case because this is to be a BBQ place... and the smell of smoked, roasted meat... is seriously missing. Food - Again, nothing wrong with it. In fact, the flavour of our sides was actually rather good. So 4 stars... except... Everything, as a side, either came from a tub or a frier. I began to be seriously suspicious of the BBQ, the sides, and the kitchen on mass. It is almost as if everything is preportioned somewhere else and just used a suvied, frier, or grill, to make it plate-ready. So we are gonna drop to 3-stars. I also noticed that they have whiskey, bottles, and cans. No taps. Though they do serve all drinks in a glass. The whole place gave me a vibe of a quick setup that they could pick up and leave at any time. To wrap this up... If this BBQ place were somewhere else, it would get rated rather high. But this is Kansas City. There is MUCH better BBQ, cheaper, just down the road... no, it doesn't matter which road. My honest opinion... this is a half-hearted attempt at a BBQ restaurant and more of a quickly tossed together venture to capitalize on area BBQ. Spend your money at a real BBQ place and let this chain go back to the areas that don't really know any better. (See Dickey's).
