Definitely new since I left home. I was interested. Ambiance was wonderful. A good amount of seating with each sitting spot feelings mildly secluded, which is nice. No one wants their coffee shop gossip being overheard. And when you walk in, you're first greeted with that classic glass case of available pastries and goodies. It was hard to not just order one of each item. Service was nice. It was counter service, and they bring your order right to your table. Can't ask for better service than that. Nice folks, good small talk. And the food, it was delightful. We got a couple of fancy coffee drinks, which were well-flavored, not too sweet, and the iced one was presented in a mason jar. Classic. We also shared like four food items. The pull-apart monkey bread was sweet and dense and delicious. Don't order this if you're alone. You'll need help to finish it. Got a creme filled pull pastry thing. That was nice. Flakes for days. This was no rough puff. For the chocolate croissant, also known as a pain au chocolat. Again, very flakey, very buttery, the perfect touch of sweet chocolate. And a savory, massive scone. Bacon and chives, I think. Also very good. Crumbly. Overall, I was very surprised. There certainly wasn't anywhere like this in Pensacola when I lived here. This place is a quality bakery that could easily be found in a medium-sized city. I didn't have enough stomach space to try everything I wanted. Lol. Tips: The chocolate croissant and the creme filled thing we got were delicious. The scone was also good, but maybe less good than other things we left on the table. Need to come back here!

He then will drop it off at Aragon Wine Market on Thursday nights when they have their free wine tastings. This went super smoothly the first time but not so much the last time. It appears that the person who was helping Caleb forgot to bring our order. My wife reached out to Caleb at around 6pm. He was at Aragon and said to our surprise that he would be right out to the house with our order. W-W-W what? Yep! Caleb drove the 20 minutes to our house, there is a toll, just to be sure that we got our order! Wow! Old school service, and the bread was fantastic too? Crazy........ So I get to work this morning and I am listening to one of my coworkers talk about this business she is trying to work with who is giving her the run around and not getting back to her. She complains that it is a brand new company and they are not trying very hard. I was happy to tell her about Local Thyme and what Caleb did for us last night. She immediately wanted to know the name of his business. I happily gave it to her. If you are sitting around thinking to yourself that you need something in your life and everything is blah and gray, I have just the thing to make your life bright and shiny again! What's in a name? If the first one garnered bad press let's change it to D's Bakery and offend a new batch of customers. If my experience is any example she is certainly working hard to attain that goal. On our first visit we consumed 2 pastries and endured a dissertation on how great everything was going. The second visit found the place closed. Today we entered the "bakery" as another couple paid for a purchase and stepped aside allowing us access to the counter where we stood un-acknowledged for more than 10 minutes while the couple departing was given a lengthy dissertation on how great she was and how many financial opportunities she had access to because of her few cookies. I honestly do not believe she noticed. Unless you're desperate, don't bother with this "bakery". Walmart would be a better choice. read more

The cake my friends received at their wedding looked like any infamous pinterest (EPIC) FAIL... Incredibly SLOPPY and covered in the wrong frosting. My friends made the best of the situation at the wedding (after all, the damage was already done-- what more could they do in that moment? Let the cake made by a toddler spoil their beautiful day? I think not...) and when they complained and asked the owner to make it right she made excuse after excuse and eventually called her clients (my friends) "BROKE" and "DESPERATE FOR MONEY/REFUND". This woman is a disgusting human being and runs a deplorable sham of a business. People have even come forward exposing her for stealing photos of their work and trying to claim it as her own! They ruined my friends wedding ! The cake was horrible . They asked for their money back and were told they would remake the cake . Which what use is another cake after the wedding is already over ??? They have talked down on them and called them broke selfish people . Which is in no way true . Hateful comments were not necessary . They cake looked and tasted awful . They even found ribbon in their cake when they cut into it ! Y'all should be ashamed of yourselves. Stealing pictures and passing them as your own. Then providing half ass service to couples. And of course you would treat same sex couples horribly, you're in bumfuck Alabama. You seriously need to accept the fact that you're not any good, take those pictures down that DO NOT belong to you, and close your business. You didn't do any of the hard work you claim you did, and that's just sad. read more

As an artisan baker, I am pretty critical... and rarely buy breads as commercial breads are tasteless and flavorless. I purchased a pack of his asiago bagels just to try them; the cost is around $2.50 a bagel ($10 for 4 bagels), which is high. They are pretty good, just don't expect Chicago or NYC Bagels, but if you live in Florida, this might be your best in the area. He was giving out his Italian rustic bread, which lacks any structure and flavour. However, for those who purchase any of these breads, just remember that if you do not eat them within 24 hours, always put them in the refrigerator... the heat and humidity will make your bread spoil fast. What Victoria commented about happened because she didn't put it in the refrigerator. All my breads that I make last 5-6 days when properly refrigerated. You can also freeze bread/bagels and cakes, too. Overall, bagels are 3.5 (overpriced); there should be a pack of 5 minimum for what you pay. Italian rustic bread (2 stars), commercial bread quality.
