While waiting for my food, I had a nice conversation with the owner. He's a trained chef and I'm not surprised after eating my food. The food was incredible, but what impressed me most was his communication from start to finish. He customized our menu, even creating two new menu items to match our preferences. Before the event, he thought through every detail--from the best location for the trailer at our park rental to the most efficient way to serve the food and even the type of plates to use. Everything ran seamlessly because of his planning. The moment that stood out most was when he noticed one of our guests of honor hadn't had a chance to eat yet and personally brought him a plate. That level of thoughtfulness says everything about the kind of person he is. John is a genuinely good human who happens to make outstanding barbecue.

It was messy, spicy and tasty. You could taste the Parmesan on the shell. The truck is pretty clever with a very clean design. Pretty simple menu, tacos and enchiladas with a choice of steak, pork, chicken and birria. The sauces they gave us had a nice bite to it. We had the steak tacos and birria enchiladas. Fresh, tasty, nice touch of cheese and the sauces were a big plus. Tacos were 3 for $12 and the enchiladas was 4 pieces for $12. They also have a variety of drinks. I hope they come back for more Vikings games and other big events at USBS.
