Interesting concept for a restaurant, but ultimately I felt that the experience and taste fell a…read morebit short, especially for a Michelin star restaurant. In terms of food, there were some great components--the snout was super tender and the sauce that came with it was very flavorful. However, I found that some of the other dishes were chewy in texture, and that the refinement of the flavorful was lacking for a menu of this price. The idea of using offal for dessert is certainly interesting, but it felt like they were adding ingredients for the sake of creativity, and felt like they didn't actually belong in the dish. I had an early reservation compared to local dining habits, so the restaurant was very empty during my dinner. This probably contributed somewhat to the service feeling a bit uncomfortable, but overall it was a bit cold and it felt like the staff were staring me down as I ate my meal.

But most of them average a months pay but this one is only a little expensive (under 200 Euro for two). We were able to make reservations on their website, it's very close to the Nuevos Minesterios Metro station, though you need to pay attention to signs, that is a huge station. Near a beautiful high end shopping mall if you need a Rolex or the like. When we got to the restaurant it seemed oddly familiar, yes we knew it from Eva Longoria's travel through Spain limited series. In the Madrid episode she looked like she really enjoyed the food here in spite of the fact that it is locally sourced offal. Of course she's an actress but it turns out she wasn't acting, the chef is a brilliant creative Spanish chef who has been inspired by traditional rural cooking from poor areas that learned to make every part of farm animals and weeds taste good. The many courses sound pretty scary but try to ignore what they are made of and savor the unique complex flavors, it's ecstasy. Unlike high class restaurants in the States, a couple of glasses of good wine will not significantly add to the bill. Don't fill up on the delicious bread. Even dessert was a complicated combination of flavors I've never encountered and I've eaten a lot of different meals around the world. Every course was a work of art, visually and to taste. A place like this is why I don't like to dole out 5 star reviews like that's the norm. This is a definite 5 YELP star dining experience. The chef and many of the staff from the television show were here, his book is for sale and he will autograph it. However if it puts you even a kilo over your luggage limit, TAP Air Portugal will nail you with a 100 Euro fee.

Odds restaurant prides itself on catering to an extraordinary diner, with a variety of culinary treats to please a range of guests. They even offer specialty items for those sensitive to gluten. Along with one of my dearest friends, I enjoyed a fabulous lunch in Salamanca at Odds Restaurant. The restaurant's modern design drew us in immediately, as the fluidity of the curved chairs mixed with the straight angles of the square tables and bench seating heightened the contemporary feel. The restaurant also has a beautiful terrace right in the action of the city. We took the server's suggestion of sharing some appetizers, truly engaging in enjoying the gastronomic adventure together. We started with tuna belly and tomato tartare over guacamole with alfalfa sprouts and lime vinaigrette. Punchy and citrusy thanks to the tomato and lime flavor, this dish excited the taste buds. The sprouts added a nice crunch. We also opted for homemade croquettes, which are made every day and the fillings vary. The Foie Mi-cuit was delicious, cooked exactly as expected, and served with a sweet wine sauce on toasted bread. For my main, I chose stuffed meat ravioli with mushroom sauce, Parmesan cheese and truffle oil, which was earthy and balanced in flavor. My friend loved his grilled octopus with slowly cooked potatoes and red paprika oil, served on a stick. The octopus was expertly grilled, and the potatoes had a soft, creamy texture. The braised veal cheek stew over mashed potato cream seasoned with truffles was a major hit as well, a truly unique dish. Not able to forgo dessert, we opted for a red velvet cupcake with violet ice cream, and fritters stuffed with chocolate and banana, served with wild red fruit sauce. Indulgent, sweet, decadent. A wonderful finish!

We ordered a few appetizers the Tuna Tatar, the Tuna Tiradotos. Mushrooms. The Mains we had Beef tenderloin, the fish, and the burger, and everything was delicious. Thank God for that because if not that my rating would have been a 1. The Service was Terrible I have never had a waitress roll her eyes at us bc we were giving our orders and she wanted to x2 the order. And we had some people in the group that don't have perfect Spanish and she had 0 knowledge of any English. Which is fine until the eye rolling especially when they would bring out the wrong drink or took 30 min for a drink. I can't blame the Bartender bc he was by himself and got slammed, and the place was full. But the drinks he made were VERY GOOD. So for the Bartender and the food I give a 5, but the waitress a -1. I can't say that I would be back, but you never know.

So what a Great experience it is to just randomly select and walk into Bibo Madrid (also Michelin rated) and be seated immediately, wow!! FYI, I guess this is a restaurant where there's a lack diversity in diners. There was a family in front of us and the dad turned around and looked at us/me and he had a look of complete fear. I must of looked like a really hangry uncle Roger. Anyway, the interior was very unique and whimsical, especially with the bahr in the center of the restaurant and the balloon......Keep that in mind, you'll see a balloon at the end of your exceptional meal (see pic)..:) We had the foie gras encrusted in goat cheese, the conjunda (chorizo) brioche, rabo (oxtail) brioche, tempura tiger prawns (skip if you're stuck on Japanese tempura) and for the grande finale - the Mirabella Sun (an orange sphere filled with citrusy cream. The Sun was artistic, befuddling when it first came out and just a pleasure to eat. The rabo sandwich with DG sauce (whatever that means) was incredibly scrumptious, I could have had ten of those brioches!! There's also complimentary gazpacho soup and bread that was very good (I didn't order it but they'll charge you for it). I'm not into cold soup, even on a hot day. Our server was very friendly and helpful and with his limited English and my limited Spanish, I would say his recommendations were 80% on target.
