You know that feeling…read morewhen you pull up to a food truck and you're hopeful, but you also tell yourself to keep your expectations realistic because it's "just a truck." I showed up with that mindset. And then Safeside BBQ humbled me in the best way. From the first moment we walked up, it felt different. Not loud or flashy, not trying too hard. Just a steady kind of confidence, like they already know what they're doing and they don't need a gimmick to prove it. The smell alone stopped me in my tracks. Real smoke. The kind that makes you instantly hungry, even if you told yourself you were only going to grab something small. It wasn't that harsh burnt smell that sometimes hits you at events, where everything tastes rushed or over smoked. This was warm, deep, mouthwatering smoke that made my stomach say, alright, we're doing this. We got to the window and the first thing I noticed was the energy. Friendly. Welcoming. Patient. Even with a line, even with the rush, nobody looked irritated or hurried in that cold, robotic way. The vibe was genuine. Like they were actually happy to be there. Food can be great, but when the people behind it are kind, it makes you feel like you're not just another order number. We came as a family and ordered across the menu so we could try a little of everything. I went big and ordered the large platter, because if you're going to judge BBQ, you might as well judge it the right way. When they handed it over, I almost laughed, because it was stacked. Loaded. Generous. Like they were personally offended by the idea of giving you anything less than a serious plate of food. Let me start with the brisket because I was not ready. Brisket can be tricky. A lot of places in Minnesota either under season or under smoke, and you end up with meat that looks right but doesn't taste like much. Sometimes it's dry. Sometimes it's tough. Sometimes the bark is bitter. I've had plenty of BBQ that was fine. This brisket was not that. It was insanely tender with real smoke flavor. Not a fake liquid smoke vibe. Not something that tastes like it spent five minutes near a smoker. This tasted like patience and time. Juicy, flavorful, and balanced. The seasoning made sense, and the bark was peppery, smoky, and clean. No bitterness. No burnt edge. The pulled pork was another standout. It wasn't watery, dry, or mushy. It was juicy, tender, and smoked the way pulled pork is supposed to be. It didn't need sauce to be good, and that's how you know it's done right. The ribs hit that perfect bite. Not falling apart in a mushy way, but tender, clean, and cooked with skill. They held together, but when you bit in, it was exactly right. The sides were just as strong. Creamy mac and cheese that tasted homemade, and fresh slaw that cut through the richness perfectly. My husband went with the birria tacos and wow. Crispy, juicy, packed with flavor, and dipped exactly how they should be. He didn't say much while eating, which is how you know it's serious. My daughter got the smash burger and it was gone in minutes. Crispy edges, juicy center, and cooked right. One of the best smash burgers I've had from a food truck. The staff deserves just as much hype as the food. Friendly, welcoming, patient, and genuinely happy to be there. Even when it was busy, they kept things moving and still took time to connect. This is not average food truck BBQ. This is the kind you plan your day around. If you see Safeside BBQ, get in line and don't overthink it. You'll be talking about it long after the last bite. Safeside BBQ is the real deal.

    This food truck has seriously good BBQ. They have an extensive menu with ribs, tacos, sandwiches…read moreand a bunch of sides. A pound of ribs was $18. These were the best! Very meaty and great flavor. You can get three different sauces. I tried them all and each was excellent. You can get two sides with the ribs for $2 each. So I got the mac and cheese (so good) and the fries (soggy mess). I would get the coleslaw next time. Also, got the jester sandwich with pulled pork, which was outstanding. It comes on house made naan and has coleslaw, pickles and sauce. If you see this truck, don't miss it!
