It seems too far for most people staying in downtown but it just so happens that we were on a road trip and therefore....had a car. Less than 10 min from downtown was all it took. No seating inside actually which gave me an excuse to wolf this shit down in the comfort of our rental car. Breakfast sandwiches were a given but I was struck by the adorable and enticing pastries and breads on display. There were a number of appealing contestants for my sandwich but the ubiquitous presence of my arch nemesis onions made it slightly challenging. We had spent the preceding few days in Cleveland and then Pittsburgh and while sauerkraut has a lot of nutritional benefits, it is somewhat lacking in protein so I felt comfortable with the "breakfast" with chickpea tofu egg scramble, roasted tomato mayo, vegan sausage and pickles on a nice, juicy bun. I admire the chickpea tofu egg it was a very nice replica for eggs. The sausage patty was gigantic and that mayo was so good. GF ordered the seitan melt with sauerkraut, red onion, oat cheese, pickles, toum, and roasted tomatoes. I tried some of the seitan which was doused in sauce and EXCELLENT. Our road trip bread supply was dwindling so we also got one of their whole grain sourdough loaves which is fantastic and still kicking 5 days later. Paired wonderfully with soup So good

The goodness that comes from their ovens is beyond compare. The ingredients they use are things like oat milk, sunflower butter, and more. Everything is handmade on a daily basis. In addition to baked goods, they offer fresh salads and sandwiches on their in-house breads. I absolutely love the chocolate rugelach, chocolate chip cookies (best ever!), blueberry muffins, chocolate croissant, French batard bread, and sourdough bread. They really have so much to choose from and it's all wonderful. Drinks (juices, coffee, etc.) also available. Support local---they deserve it!

We took a walk around the neighborhood and came back at 11:30, only to find a limited number of "pescatarian" sandwiches while the ham and butter sandwiches would not be ready until noon. At that point, we decided to give up on the sandwich plan. Overall, I would still come back because the bakery itself was charming and the madeleines were excellent, but the timing around sandwich availability was frustrating and worth knowing ahead of time.

This actually was not our first choice or even where we were headed next, but it is where we ended up. Inside, the shop has a large front area filled with pastries on display, followed by plenty of seating toward the back. As we started placing our order, it was clear that our cashier had a disability. A quick look at their website explains their mission well, stating that they provide comprehensive training and career pathways for adults with disabilities, demonstrating that when workplaces are designed with accessibility and support in mind, everyone can contribute their unique talents and thrive. The cashier helping us was super nice, although definitely a bit chatty. After looking through the baked goods, my kids chose a red velvet cake pop and a snowflake sugar cookie. For my coffee this morning, I went with a hot gingerbread latte, while my wife chose an iced version. My coffee was good and clearly tasted like gingerbread, with plenty of sweetness and warming spices coming through. I did not get much coffee flavor, but that was not unexpected given how strong the gingerbread flavor was. My wife also enjoyed her iced gingerbread latte. The bottom line for me is that I would head back here again in the future. My wife and I enjoyed our coffees, my twins enjoyed their baked goods, and I really appreciate their mission of employing adults with disabilities.

So, I went back next morning to see if they have fresher ones on the shelves. I saw the one I left the night before. Ahhh... moon cakes must be shelf stable. Not! Each baked goods should have date time stamps. I felt cheated. Pink Box Bakery is the only Chinese bakery in Squirrel Hill. I think I'll go to Korean or French Bakery on my next visit.
