They're an iconic French patisserie with huge glass windows that allow customers to watch the talented pastry chefs work their magic under the massive crystal chandelier. Their team is also one of the friendliest in Brugge, happily walking you through the display case of treats. My favorite bite: the brioche bread (cramique) with either chocolate chips or raisins. It comes out of the oven piping hot and is handed to you warm. The incredible smell of baked bread wafts down the street. It's a bite that we ensure any of our visitors enjoy while here. They're also known for: - Merveilleux: meringue and whipped cream coated with shavings of chocolate, crystallized meringue, or almonds - Cramiques: brioche with chocolate chips, sugar pearls, raisins and sugar, or just raisins - Stuffed waffles: flat waffles filled with vanilla, brown sugar, or coffee mix - Other menu items: meringue twists, croissants, Yule logs, tea, and coffee We are cheering them on and thankful for the memories and sweet treats while we've been here!

I'd like to see Duman add in a second associate for the back counter, ask customers to keep the doorway clear, and if the guest is unsure of what they want and there's a line, move on to the next customer and give them time to think about it.
