I'm not sure whether they make their sausage or get it from somewhere outside, but it seemed to be quality stuff before they cooked it. It was coarse ground like I like it with good seasoning. But where was the smoke? The sausage honestly looked and tasted like it was sliced and boiled. I was shocked. The potato salad tasted good, but the texture was all wrong. Everything was chopped up small like it was done in the food processor and there was no love in it. Fried okra is hard to get wrong, but there was nothing particularly right about it either. I was so suspicious about the lack of flavor in my meat that I drove around the back parking lot when we left. There were several racks of neatly stacked firewood, but it was all filled up to the top. Either it had just been delivered, or it's not getting used. I suspect the latter. This is Texas. If you're gonna keep the doors open at a barbecue joint, you have to do better. I love coming to your restaurant, and I hope you get things figured out.
