I love that Custom Meats is now offering sandwiches on the weekends. I have had 2 so far, the pulled pork and the roast beef, both on the Fatto and Mano lard brioche buns. Those buns take anything to the next level. The sandwiches sell out fast! You can purchase the brioche buns here which have become a staple in my home. The staff is always friendly and helpful and I got an excellent cut of brisket to make corned beef which the butcher helped with...it was amazing! I also love their maple sage sausages, ground sweet Italian sausage, their seasonal peach sausage, and freshly ground beef and pork. Can never get what you want from this place. 3/3 times I've asked for dry aged strips and they tell me they ran out...I can see them hanging on the back. These people are straight terrible business people. Beyond that, the cuts they do have are mid. Whatever this place thinks they are about, they missed the mark. Fairfield deserves better. I had a Fantastic experience taking Custom Meat's Butcher Class with Nick. They do it at the Shop and they provided great Snacks: Sandwiches (Featuring Bread from Fatto a Mano), Sliced Meat, Cheese and a selection of Beer. They provide a fresh cut steak cooked on-site to enjoy as well and at the end you slice your own steak to take home with instructions on how to best cook it. The class is designed as Close up Observation and Explanation. Nick walks you through the entire process from the cooler, tools and breakdown of 1/2 of the main trunk of the Animal. He covered all aspects of cuts, anatomy, how and why they part it out the way they do, what to look (and watch out for) as he is doing the knifework. Nick also does it in a way that makes it engaging, understandable and answered all of the many questions I had along the way. One Note: If you are squeamish, remember you are seeing up-close knifework and the physical manipulation of real physical structures and their parts being broken down. For me I came away with a whole lot of knowledge that hits different than you will see in an Online Video or book. It also gave me a deep appreciation of the reality and skill involved to create what we end up enjoying on our table. Nick was a fantastic instructor and all-around great guy. Pricey and high quality meats but lacking in variety given it's a small butchery. As such, you may not find a desired or specific cut and section. On most days, it's better to reserve versus just stopping in and live with potential disappointment. Whatever remains will be sold with the standard sales pitch of it being juicy and flavorful. Which may be truthful but should be applicable to all items sold on premises due to it being a "custom meat" shop. Plan ahead and reserve is your move here. Price point is mid to high but given the quality, it may be worth it. I've enjoyed the prime cuts whenever they have been available given I rarely plan my meals. This place or butcher has had some press, as such, deems itself an honor to shop. People need to relax on the notion of food celebrity and glorified industry. Self proclaimed chefs and food industry experts need to get back to service and fulfilling customer wants and desires. Not forcing their preferences or selling unwanted cuts. Went to pick up a pre ordered 4 pound beef bone in order that I requested that somehow turned into a 6 pound order the day of that came to 285 dollars! Cooked same day low and slow after seasoning to only eat the toughest meat we all ever have ... we will not be back. read more

Ruined Thanksgiving and then kept my deposit. I was a huge fan of Custom Meats till this Thanksgiving. Ordered a small Turkey and paid a $60 deposit. They gave away my Turkey and only had 17 to 20 pound turkeys. Way too big for my 6 guests. Offered me a $60 store credit, but no written receipt. Turns out is was only good for that day, the Wednesday before Thanksgiving. That was not made clear to me. Went in a week or so later and purchased a steak. They did not honor the credit. It was "non-refundable" and had now lapsed. I was a huge fan and directed many people to go there. Never again. They've lost my business and I expect if they continue to treat people with such short sightedness, they'll be gone soon enough. Not good people, not good business owners. Ok so I'm an old school old man. All I need is a friendly person that provides excellent service and advice and great meat at a good price. Customs meats hit every box. I went in for a bone in pork shoulder. Before butchering the pork the butcher asked me some great questions about what I was going to do and for how many and then gave me a custom cut as well as doing some prep on the shoulder and provided some excellent advice on at home prep and cooking. The cut was perfect and the flavor amazing with very little seasoning. I don't believe I've had a better pork shoulder. I don't have a lot of experience going here, just one. Place looks legit but the prices are crazy. I am all in on spending on good quality meat. But this is a little crazy. I bought one ribeye for $65 bucks. It was good, but I've had the same for half that price. It wasn't anything out of the ordinary from other prime cuts. Plus the bone was giant. For the 1st time I made restaurant quality burgers at home thanks to Custom meats. They gave me the quality chop meat and also showed me the trick regarding how to form the burgers to get the best texture. My burgers came out juicy, they had that restaurant texture, and were flavorful. The best burgers I ever made at home and they were very delicious. First time in the store! Wow! Place is immaculate, and what a fine selection of prime top shelf meat! I picked out 2 large pork chops with a nice fat cap. LOADS of flavor, just salt, pepper and seared them on each side, lowered the heat and they were perfect! The first bite tasted like roast suckling pig! BIG flavor, tender.... like the pork chops from long ago! Also got a pound of fresh ground beef, mixed it with soft butter, and some cooked onions, made patties, and sauteed them in a frying pan. Got a nice sear on each side, and WOW! Once again, TOP QUALITY! "Tim" was extremely helpful! Gotta try it! Best experience in a long time! I remember "Fairway Beef" on Black Rock Turnpike years ago, well, this is a similar experience, only, their sources are located mostly in CT from grass fed animals treated humanely! LOVE IT! I don't know what was going on tonight but the experience we had was so unfortunate- we'll never be back. In the checkout line we asked jokingly if their beef jerky (which was at the register) was as good as the biltong in Africa. The guy at the counter said it was much better and my husband made a joke that he is from South Africa so he's very hard to please. When I asked the guy if he had ever had biltong from South Africa he said, under his breath, "I wouldn't buy meat from Africa." As someone who has actually visited The country and my husband being from there, I was pretty offended. One of the worst customer service experiences I've had in recent memory. read more

I am not one to normally write reviews but when the service is warranted, or this case lack of service, I do. I went to Custom Meats today to pick up a few sausage links and they only had hot made up. They offered to make some plain Italian and said they would be ready in about an hour. I came back an hour later after running some other errands as I live 30 minutes away and politely asked if they were ready. I got a REALLY rude, "We said we would call" from Tim. I tried to give the local guys some business and what a mistake. To top it off, the sausage was ready and all packed up, so why the attitude? You have great meats, but you really need to focus on your customer service skills. Well Tim, don't call. I won't be back. You lost a customer forever over your miserable attitude. (the stare down out the window when I walked to my car was the icing on top.....) I was very disappointed with the service I received. Woman at the register was not knowledgeable. Ordered French cut rack of lamb. When I went to pick up my lamb to inspect.. wow! Surprised by the size of my rack. The bones were huge! Obviously the rack of lamb was not what I expected. I was quoted $33.00 per lb. and was charged $1.50 more per pound! Butcher pulled a fast one on us with center cut tenderloins ordered for Christmas dinner. We ordered three one pound tenderloins and they were all cut overweight so we asked them to trim them down to one pound each. Instead, the butcher gave us two overweight tenderloins and one very small one. Obviously not what we asked for and not what the recipe called for -- the different sizes will have different cook times, etc. And we're talking center cut tenderloins here -- so not a cheap cut of meat. Of course, we only figured out that the steaks weren't as ordered when we unwrapped them on Christmas day, when we couldn't do anything about it. Except, of course, calling them out in this review for their underhanded tactic. Take your business elsewhere if you want an honest cut from an honest butcher. read more

Berenice is a skillful butcher with a hand for making exquisite sausages and a friendly vibe that makes you feel at home and not at a boujee pretentious place that many boutique shops across the country try to impose. Can't imagine going to and supporting any other place when it comes to meats that are properly sourced, transparency, and know how.
