If you do or have done wine tasting in California it's very much that same kind of feel here. This place is located in an industrial Park that is a short distance from Mandalay Bay. We knew that we wanted to try some of the cheeses. They also offer soup, salad, and a menu of sandwiches. Today they also offered two special sandwiches. We ordered the two special sandwiches (Tuna Melt & Mortadella) and a cheese board with added Truffle Cheese. We knew it would be too much food so we had 1/2 of the sandwiches wrapped to go. (and latter brought home a lot of the cheese board). I tried the Tuna Melt Special. It was served on very good toasted sour dough bread. The tuna was different and was made by Hobbs. It seemed more like fresh tuna than over baked canned tuna. It was embellished nicely with fire roasted tomatoes, pepperoncini, and provolone. I liked that it wasn't drippy or messy. But I do have to say that this isn't a traditional tuna melt because the cheese was part of the tuna salad. Still it was good so I can't complain. My husband enjoyed the Mortadella Special. He said that the mortadella was a higher quality than what most places sell. We tred a variety of cheese on our cheese board. The board was adorned with bread, figs, and corn nuts. What stood out were THE CHEESES. They all had a special creaminess to them and they all had flavors to them that surpass any cheeses that you can buy at your local market. The people there were friendly and helpful. Someone who was either an owner or manager asked us how everything was. Unassuming spot in a strip center that seems more commercial than open to the public - but don't skip going. There are a few outdoor tables though you're looking at a parking lot. Indoor is picnic/large table style which has a community feel. Food, lots of options, deli style. Order at counter and they prepare food in the back. Rated 4 stars because the wait took forever. You can see on the salad they cut the salami in small pieces, which must have been what took so long. They give great portions, but you do pay for it. I'd love if they had a light/small salad option with half the toppings and cost. (Otherwise, great to share). Sandwiches are nice, also lots of ingredients so you won't leave hungry. Staff is friendly, nice and want to connect with patrons, which was nice. Bar vibe, can get beer/wine with your meal to make it a casual date spot. Again, not intimate as it's more of a community spot. I liked that they sold honeys and unique deli items, but it didn't seem to be local and a lot of it was imported from other countries. My friend hosted a cute Galentine's Day and the mission was to bring your own board... so clearly, I cheated. And let Cured and Whey do the board for me! Absolutely blown away by how cute my charcuterie order came out! I reached out to them and they provided me pricing so quickly. They do charge extra for any next day rush orders, but luckily I got my order in on time and they were able to do it for me without adding! Pricing definitely makes sense for everything you get. If i had to do this myself, I probably would have paid more honestly and thrown out half the ingredients, so in my opinion, it's a solid deal! They asked what kind of cheese and meats I wanted along with how many people it was for, and honestly it came out even better than I imagined! Their cheese and meats are the best quality, and they even labeled everything so I would know what it was. The jam they included was honestly so good, too, I couldn't stop eating it. They even added a cute little fake roses on it, too, to make it fit the theme of Galentine's, So cute!!! The best part is that they organized everything on this hard board underneath, so Ijust had to move it over. It was perfect! I love to make classic Italian cuisine, but finding ingredients like caccio cavallo, primo sale, guanciale, and other quality italian staples is challenging. Enter Cured and Whey. Tucked away in a nondescript industrial park south of the strip, you would never chance upon it. I found this place during the pandemic when they had an online ordering website when searching for guanciale for carbonara. The side venture of Chef Michael Stamm's wholesale shop, Cured and Whey's specialty is charcuterie boards. They also have a deli menu with crafted sandwiches. They advertise "over 200+ cheeses in stock, and 60+ meats from around the world." They also have charcuterie education. They used to have a website where you could see what was in stock, but that disappeared after the pandemic. The wholesale business website at http://www.mgpfood.com/ also appears to be broken. The product quality and variety are unparalleled in Las Vegas. The sandwiches are hit or miss with their condiments but rotate. The store has a few tables set up so you can eat in store. It's a basic setup, but it works. It's challenging to know what's in stock for meat and cheese since they removed the deli section of their website. They don't do much promotion and seem to rely on chance/word of mouth, which seems like a missed opportunity because their selection is amazing. While I've read about the great service in other reviews, I've found the service to be meh. The counter staff do not seem knowledgeable about the product and inventory and make no attempt to get to know the customer to make recommendations and increase sales, which is another missed opportunity. OMG! Seriously the best sandwich I've ever had in my life. Cured & Whey is a true hidden gem! They are tucked away in a small corner in between businesses off valley view. The shops sell artisanal meats, cheeses, jams and more along with beautiful charcuterie boards and premium sandwiches. The truffle honey grilled cheese is honestly life changing. I REALLY wanted to love this place. A cute local shop with fancy sandwiches and made to order cheese plates??? Yes, please! I'm here from out of town. Ordered a turkey sandwich, a Cuban sandwich and a French sandwich (no longer on menu), plus a bowl of tomato bisque with a side of bread. I also bought a can of Weird Tea and a terrine of foie gras on a separate tab. Let's start with the Cuban - I don't know what the holy heck red sauce they put on it but that's NOT a Cuban. The meat was fresh and the sandwich was pressed but that sauce/spread threw the sandwich off in a bad way. The flavor just didn't hit. (4/10). The turkey sandwich was for my kid. Almost $4 to add bacon, which was microwaved (I watched the girl making it say they didn't have it and then go in back and nuke some). He said it wasn't good until dipped in the tomato bisque. Will give a generous 6/10. I wish they had told me bacon would add $3.75 or I wouldn't have added it, but they failed to mention that. The French sandwich was on the online menu but when I arrived, it wasn't on the menu at all. I asked and they said I could get it but on a ciabatta roll vs a baguette. Eating it now. The ciabatta seems undercooked/raw. No balsamic drizzle (as described). Not a great sandwich at all. (4/10). I'm at airport so will take home and press and hope for the best. But really...should I have to finish cooking the food? The soup was apparently good, but instead of being charged $7, I was charged $15 for soup and a grilled cheese which I didn't order or receive. (Check your receipts!!!) I also tipped on that amount, so there's that. To be transparent - I called and the manager Jessa offered to refund me the $15, but should I really need to do that??? Glad I looked. In addition to the sandwiches, I got a terrine of foie gras and a weird tea ($4). The person who rang me up (Kaela) couldn't decide what to charge me. First the terrine was $89, then it was $82, then $89 again. Very annoying. She did give me an ice pack, which was appreciated and a nice touch, but I have zero confidence I paid what it was actually priced at. The place was in an industrial area. Small and seemingly well curated. They had an okay selection of charcuterie - nothing out of the ordinary but decent. They probably do great catering, sticking with the basics. I found them on Yelp because I'm a horrible savage that likes foie and can't get it shipped to CA. So I went for that. Learned about this wonderful cheese and charcuterie shop through my boss! He had caught me eating string cheese at work and gave me the stink eye. Lol. He then introduced me and a few coworkers to artisan cheeses from Cured & Whey...by sampling cheeses at the office on our breaks. Recently, for my birthday, he decided to bring the office to the shop to enjoy a 5 cheese Cheeseboard. Our experience was such a delight! Customer service - excellent!! Cheeses - superb!! Salad - refreshing!! The goat cheese was the most amazing I've ever tasted - so fresh!! Caroline was the best! 12/18/23 Tuesday. First time here and wanted to get something really nice for a family who loves charcuterie. Staff was super nice and very helpful which I knew nothing about different cheeses. I was able to sample cheeses and the lady who helped me seemed very knowledgeable. So I trusted her 100% of the choice of cheese she picked out. Cured & Whey has delicious meats, cheeses, and more. I was like a kid in a candy store checking out everything they have to offer. The main part of what they offer is found in the large cheese and meat cases at the front. Spread out around the shop are gourmet foods and other board goodies like jams, nuts, and mustards. Of course they sell wine! They also offer a small menu of cooked foods like their Truffle Honey Grilled Cheese. One of the things that sets this shop apart is the amazing customer service. The employee that helped me with my lunch was very accommodating and friendly. The woman that helped me with my meats and cheeses was able to make recommendations and knowledgeable about their products. I knew that I needed to try the Truffle Honey Grilled Cheese based on the numerous reviews raving about it. This was rich and delicious! A crusty bread with tasty cheese, truffles, and honey. The little cup of macaroni and cheese with it blew me away. It had a lovely black pepper taste. Right now they aren't offering dine in, but I was lucky enough to snag the picnic table in front to enjoy my food. To make a board at home I picked up 1/4 pound of several meats and cheeses. This was enough for at least two boards for two people. On my next visit I'll definitely order ahead and have them craft one of their beautiful boards for me. I was told that these are $15 per ordered in advance or $20 per person if ordered the day of. Very reasonable! My favorite cheeses were the Stilton Blue, Butte Hatch Chile, and Primosale Peperoncino. Also delicious were the Rustico Black Pepper and Alisio's. The Cajun cheese curds from the refrigerated case were yummy too. My favorite meats were the Pistachio Mortadella and Don Juan Chorizo Iberico. Also delicious were the Soppressata and Calabrese. Of everything I ordered I would order it all again. I love that instead of offering a wide selection that they instead offer a quality selection. Before covid days I had planned to attend a cheese tasting class so I look forward to those returning. My friends and I will be there for wine and cheese once we get notification that these are back. As a side note. As I was checking out a kind man with Secret Creamery gave me a pint of coconut ice cream. Oh, my. This was the freshest, tastiest, creamiest ice cream I've ever had. Lunch in Las Vegas... My friend has been selecting great places to go to during our vacation in the "9th Hawaiian Island". She said that she looks at 5 star places and notes how many reviews they have. Seems like she has a good system for choosing solid dining spots. Cured & Whey has over 100 reviews and still remains a 5 star establishment. Why? We went to investigate... First off... my friend from New Jersey was really hungry, so I told her to go ahead and order. I waited for Niki so we could share two different things. In the meantime, the staff greeted and welcomed us and offered us water! They were so friendly! When Niki arrived, we ordered the Duck Reuben and the Truffle Honey Grilled Cheese. Both sandwiches were stuffed with a combination of delicious ingredients. I personally enjoyed the Duck Reuben because I prefer savory flavors. I would return and try more items on the menu. Cured and Way is what we used to call a "meat counter" type deli located south of the strip (Russell Road exit) on S. Valley View Blvd. in an industrial park, that seems populated with at least a few grocery wholesalers. It makes sense as the overhead airline traffic makes you suddenly aware of the close proximity to the Harry Reid Intl Airport. You can order meats and cheeses by the pound and even caviar, but you can also choose from a handful of signature, made-to-order sandwiches. They all sound great, but specifcally they have a Duck Reuben sandwich. I'd never heard of such a thing before and now I wonder why ALL reubens aren't duck.  The easy answer is that it's not cheap. Quality rarely is. The sandwich size is what you might expect of a standard sandwich -cut corner to corner, and it was $20. But this is (as far as I know) the ONLY place that makes a duck reuben. They don't skimp on the meat and it is very high quality, so to me the cost is more than justified. A tiny condiment bucket with four pickle chips accessorizes the sandwich. I don't usually like sweet pickles but these were fantastic; the slightly spiced, sweet vinegar really complemented the duck and Russian dressing.  The duck is tender and lean, not overly fatty nor chewy. The marbled rye bread was soft but structured and not crumbly like the day-old (or older) variety at most Vegas valley grocers. I ate my sandwich there, since there were three small round-tops and two bench tables with not many fellow diners. I opted for a ginger ale, and would recommend that as a great accompaniment to the sandwich unless you want to buy and crack open a bottle of wine from the shops selection --at least one of which I have no doubt will pair excellently if you ask for a suggestion. I went back to my car and started writing a note to a friend that ultimately became this review. I stopped midway to walk back inside and order a second $20 Duck Reuben. I learned that Valley Cheese (a Henderson institution that recently closed) sourced most of their cheeses here. They also do charcuterie and cheese boards which can be made to order with a day's notice. It turns out they've been here for five ot more years and so it's surprising that I'm only discovering it now. CURED & WHEY is a true gem! read more

The business is in a big industrial park, but is very easy to find thanks to Waze. The shop is like a little old-world deli with big hunks of meats and lots of cheese selections. They weee so nice in the shop and explained what was on my board and if we had any questions. Super friendly staff who obviously took great pride in their work. While each board is completely custom...no 2 are exactly alike, my board was amazing! 3 different cheeses, 2 meats, candied almonds, dried figs, fresh berries. YUMMO!! This place is amazing and the amount of food you get compared to those measly boards on the strip make this a must for your next trip.
