My daughter and I had a lovely day trip to Tulsa. Before we arrived, she read about County Bird Bakery. She read that they often had lines, but they had a pre-order menu with no waiting for pickup. So she ordered a box with 2 Miso Blondies, 6 Chocolate Chunk Cookies and 2 Brownies. Oh my!!! We loved the Blondies; they were so moist and truly delightful! The brownies were equally excellent! I savored those, eating several slow small bites. The chocolate chunk cookies were large and did not at all disappoint! This bakery is on Third Street and has plenty of parking in the back, off Utica. Be sure to try Country Bird Bakery! Their items have interesting ingredients and are all SO good! This has to be 5 stars only allowed because she has a JAMES BEARD AWARD. I have been dying to go, and I finally made it within an hour of close on a Saturday. Luckily there were just a few things left that I was able to snatch up to try, and it's delicious as expected! The cherry cheesecake danish was heavenly. I've heard great things about this place but didn't want to stand in line for hours... so, when I found out I could pre-purchase a loaf and pick up I did. I waited in line for 20 minutes to pick the bread up as I wasn't aware I could walk in front of others. However, I did get lucky at near closing to buy a few extra items. The black garlic honey butter and chocolate chip cookie were phenomenal, as was the berry? Sourdough. Question there as I think that's what it is although I thought I pre ordered something different. The bread is soft and flavorful with perfect crust. The crust has an extra flavor to it that I can't place. The chocolate croissant was really good too. You can pick up extra items before you walk up to order like jams, books and pre made food items. It is a very small bakery so the nonstop line wraps around the building so be prepared to wait and possibly not get what you want. read more

Rain or shine I'm very impressed by the crowd this bakery brings out. They have very limited hours but when you go, expect to be in line for at least an hour or two. They do have an option that you can purchase a loaf ahead of time that's online, but you still have to wait in line to get it. A majority of the time leaving the Tulsa Farmers' Market, we hit the highway. There are other times we leave another way & at those times we come across Country Bird Bakery with a line wrapping around the complex. Once we decided to make a visit, I can see why the line at that length was on the regular. We got there around 8:45 (they open at 9) & we weren't that far back. The bakery smells made its way outdoors every time someone got their orders & left. This place is sourdough driven & their options are very wide. I got two pastries: Blackberry Danish & Blueberry Coffee Cake. Coffee Cake is an automatic no matter where I go, with blueberry too?! I enjoyed it a lot, plenty of blueberry. They also sold the coffee cake as a whole to where you can have some for later. The sourdough & blackberry compliment each with the danish, I had that first before coffee cake. There was so much to choose from just like the focaccia sandwiches that I really wanted to take home (I'll just have to come back for one of them). We might have to catch them on a Thursday to see how/if the options & experience differ from Saturday. read more

I noticed their storefront when I was driving in the area and at least three people told me to try it. They're only open on Saturdays so I made a reminder to check it out over the weekend. Parking is located in the back of the building off of Utica Ave. There are also limited parking spots in the front. I was told there's usually a long line by the time they open at 9am and that they usually sell out of their favorite items like croissants and sourdough. I stopped by around 11:30am and the line wasn't bad (we all fit inside). The shop itself is small but they do have a bar by the window with some seating available as well as outside. They carry a selection of related products like butter, flour, spices. olive oil, tea, chocolate and even kombucha. I tried their ham & cheese croissant, pecan frangipane & rose croissant, and the yuzu black lime knot. They were all indulgently amazing, especially after warming them up. They also sell granola, flavored butter, hummus, soups, and take-and-bake croissants, cookies, and sourdough pizza dough. I can't wait to come back and try more of what they offer. Their commitment to local ingredients and quality is impressive. I'm definitely part of their cult following now. They also offer baking workshops and seasonal baked goods. This place is open at very select times, and for good reason. It is a small, local shop, with wonderfully delicious pastries that have unique flavors. My husband and I bought $80 worth of pastries, from croissants, to apple crumble, to monkey bread everything was divine. The monkey bread stood out to everyone as the show stealer! Simply the best baked goods in town. I have a sourdough starter and make bread several times a week. I had no idea how amazing fresh milled flour could be in bread. The difference is indescribable. The line at open was really not bad, goes quickly. Absolutely get the cinnamon rolls, they are more like a croissant and will *change* your life. Extremely buttery. Calories are high here, however. Whatever you get will blow you away. And prices are high due to the quality of the items. *For parents* - leave littles outside if you don't want them exposed to nudity (large poster on the wall had a totally nude woman). The line was crazy last Saturday at 9am (25-30 mins queue) and it was not as bad at 10am this Saturday (10ish mins queue) . The brownie was $4 and I believe most of the danish and croissants are about $8. I believe the pastries are all sourdough. I visited twice. First time, showed up for one of their Thursday mornings and was thoroughly impressed. Service was quick and kind, food was all a 5/5, and I was there an hour after they opened. The next time I showed up was before they opened on another Thursday. About 20 minutes before, so I was the twelfth person in line. Quick enough service, excited to get inside, but they were already sold out of their blondies. I get up to the glass counter and ask if they're out for the day and I'm told "yes, they're quite popular." I ask for a further explanation, and the reason is they hold back whatever is necessary for their pre-order dessert boxes without caring what that leaves the customers coming in. Disappointing because I don't want to buy a $40+ box that includes things that I don't want or can't have due to personal allergies. I grabbed a few things, one that was a 5/5 and the others that were a lil over baked. The answer and experience was enough to make me not go back. After reading ravishing reviews from locals, I had to try it for myself! I arrived around 9:40 and lined up behind a windy line. The store had inside and outside seating, but most brought their baked goods home. 2 hours later, I was finally able to enter! The bakery was decorated with pottery, artwork, and goodies from local and/or sustainable businesses (always a +). A small group of 4-5 manned the single register and brought out fresh baked goods, which were all made with some sourdough. We decided to order a little bit of everything: a pistachio croissant, chocolate croissant, sesame roll, and kouign-amann. Everything was fresh and amazing! My favorite was the pistachio croissant. Each morsel of the flaky croissant was filled with crunchy and not too sweet pistachio filling. A lot of the sweet pastry did not have the sourness of sourdough! Pros: my friend read about this place in the local paper. Everything I had seen about the place mention long lines out the door. There was no line when we got there. About 2 1/2 hours after they opened, but they had sold out of a lot of things. I really liked my chocolate croissant and this toffee Blondie I got. Cons: OK. I didn't like the focaccia bread. I took the mortadella out to eat at a later time. There was so much of it, I could make a second sandwich later. I didn't like the pesto spread on the sandwich. It was too lemony? Country Bird Bakery's bread is featured at FarmBar, along with a rich, decadent, luscious butter that could have been stolen by Prometheus himself. Cat Cox is the owner and pastry chef at Country Bird Bakery. Her philosophy about bread is best left to her own description: "Much like wine, great bread should embody the taste of a place and time. I strive to incorporate local vegetables, fruits, grains, herbs, or dairy into every loaf I bake!" This beautifully eloquent homage to the culinary arts is backed up by Cat's use of locally sourced grains, primarily from the southwest region (Oklahoma, Arkansas, and Texas). She kneads and folds her love and dedication into her breads and pastries, carrying the very essence of Oklahoma and neighboring regions to one's waiting mouth. Having visited Dominique Ansel's Bakery and Bien Cuit in New York and sampled bread from the legendary Dominique Crenn, Chef Cox's reputation is my only true metric for this review. With a line formed and an empty stomach, let's eat. Walking into Country Bird Bakery, you're rewarded with a beautiful scent of fresh breads and sweets that gets the mouth watering. The atmosphere is welcoming and pretty. You're greeted with a fantastic view of the ovens, bread, and a gorgeous display case with delicious delights eagerly awaiting discerning customers. Behind the counter was Chef Cox. With an absolutely radiant smile, she guided each customer to various pastries, breads, and sandwiches. Her energy and personality are that of a hummingbird--warm and friendly, treating each customer like a family member. This leaves a lasting impression. For this tasting, I left the decision-making entirely in Chef Cox's hands. I don't want what is popular. I want what she is most proud of. What she would want someone to taste. As such, first up is a gorgeous city loaf with hatch chilies. The crust on this bread is phenomenal. When sinking my teeth into my first bite, you're rewarded with a delicate sour flavor that gives way to a gorgeous aftertaste of chili. This is a luscious bread. For the offering, Chef Cox selected the Focaccia Sammie "Chef's Choice." This bite is simply one of a kind. Delicious speck is sandwiched between gorgeous focaccia with mozzarella and pesto. Each bite is packed full of flavor as the salty speck gives way to a gorgeous pesto flavor with endnotes of creamy mozzarella. What is most impressive is that Chef Cox's bread flavor is pronounced in each bite! For the first dessert was the chocolate croissant. This folded layer of heaven in pastry form. Before biting into the croissant, I could discern the grains of flour spotting each layer. This highlights the quality of the stone-ground flour that was used. Each bite featured beginning notes of buttery bread giving way to middle notes of tangy dark chocolate with subtle sweet endnotes of buttery bread. Next up is the Sourdough Maritozzi Yuzu YaoPon. This creation is borderline transcendent, and I do not have the discerning flavor palate to correctly analyze it. Each bite features such a unique initial flavor profile of a sweet yet earthy pastry cream that confuses and tantalizes the taste buds with wonder. This initial layer of cream gives way to a gorgeous tangy Yuzu curd that works in perfect harmony with the cream. With each bite, I curled my toes and as the cream dripped from the bun, I could not allow this unique ambrosia to escape my mouth as I eagerly lapped it up from my beard, fingers, and hand. As I sit here, stuffed with gorgeous grains of heaven, I took a moment to really think about how Chef Cox's creations stand up to the highest quality of bread and pastries I have had. The best analysis that I can think of regarding the experience that Chef Cox has folded into each beautiful creation is this; I have had Dominique Ansel's cronuts and other delights.
